metabolic balance Monday Recipe - Anti Cancer Soup
Here is a modified version of Dr. Fuhrman’s anti Cancer soup. Always follow your serving sizes when eating a soup. Freeze any leftovers for future meals to avoid temptation. If you would like to try other cancer fighting soups, go here.
Instructions:
Ingredients:
½ cup dried split peas
4 cups water
6-10 medium zucchini
5 pounds large organic carrots, juiced (use less if you don’t want the soup to be sweet)
2 bunches juiced celery
herbs wrapped together so you can fish them out later to add seasoning without salt.
1 teaspoon Mrs. Dash no-salt seasoning (may be omitted)
4 medium onions, chopped
3 leek cleaned carefully and coarsely chopped
2 bunches kale, collard greens or other greens, tough stems and center ribs removed and leaves chopped
1 cup raw cashews (would be considered your protein)
2 ½ cups chopped fresh mushrooms which are not considered a protein. If you use Shiitake don’t use cashews.
Instructions:
Place the beans and water in a very large pot over low heat. Bring to a boil, reduce heat and simmer.
Add zucchinis without slicing or peeling to the pot.
Add carrot and celery juice and seasonings.
Put the onions, leeks and kale in a blender and blend with a little bit of broth. Pour mixture back into the cooking pot.
Remove softened zucchini and blend with the cashews. Pour the creamy mixture back into the pot. Add mushrooms and simmer until the beans are soft.
Cooking Time: 2 Hours
NOTE: If you use a mushroom that is considered a protein omit the cashews.
