Low-fat intensely chocolatey bundt cake with a dusting of icing sugar. ^_^ (vegan!)

This recipe comes from Veganomicon, potentially my favourite vegan book of all time after Ms. Cupcake’s book. I’ve never made a bundt cake or tried using coffee in a chocolate cake before but it turned out pretty great! You can’t taste the coffee which is great, it just makes it darker in colour and richer without the need for soya butter etc.

I think next time I might drizzle this with a little glacé icing and top with toasted crushed hazelnuts and fresh raspberries, yum!
