In June myself and my beautiful lady went away for the weekend to the rather wonderful Carnlough, which runs along the Glens of Antrim, as it was her birthday.
It’s fair to say we did have a great time, good food, afternoon teas, walks on the beach, climbing hills, and the occasional episode of Barefoot Contessa… But when we got home, my main birthday promise was to make her a cake that she really wanted, and below is the full recipe for it. |
Sponge BaseI have been making sponges for so long now, that I don’t need a recipe, rather I remember it due to the ease of it’s ingredients. The only issue is how many eggs to add, and that really depends on the amount of flour you use Ingredients
How to make the Sponges1. Put the butter and sugar into a bowl, and beat together with a wooden spoon until completely combined. 2. Add in each egg, one at a time, and mix into the butter and sugar mixture. 3. When all of the eggs are combined, add in the vanilla. 4. Add into the flour and bring together into a smooth paste. If it looks and feels a bit thick, add a splash of milk and mix through. 5. Divide the mixture in two, adding them into 2 lined and greased, cake pans. 6. Bake in the oven for 20-25mins, or until a skewer comes out clean. |
Next is the build, and it couldn’t be easier to be honest.
Ingredients
The Build1. Put the cream into a bowl, along with the icing sugar, and whisk until it forms soft peaks. 2. Slice the strawberries up, and keep to the side for later. 3. Put a layer of sponge down onto a cake stand. Cover this in half of the cream. 4. Cover this in strawberries. 5. Put the 2nd sponge on top of the cream and strawberries. 6. Cover this in the rest of the cream, followed by the strawberries.. 7. Cover the strawberries and the cream in chocolate flake. Tastes beaut! |
