Tofu Meatloaf
“This tastes just like meatloaf, similar texture. This is wonderful.”
Take a whole container of extra firm tofu (protein portion) and mash it up. Then take 3 slices of Wasa (or RyVita) rye crisp bread. Ground them up or just break them up real good in with the tofu. Add spices to taste: basil, oregano, garlic powder, onion powder and some sea salt. Dice up 2 TBSP of onion (or you can use leek or shallots). Mix well with either your hands, or a spoon. Spray the bottom of baking pan with a little olive oil*. Place mixture in pan top with chopped tomato. Bake 350°Ffor about an hour. (Will be soft and browned when done).
* use this recipe only when allowed to add oil
