Shrimp with Mango Salsa
shrimp (protein portion)
mango
onion (1-2 TBSP)
cucumber
cinnamon
coriander
Cook shrimp to your liking and set aside. Combine chopped mango, onion and cucumber in a bowl. Sprinkle cinnamon and coriander on top and stir well. Serve with shrimp – also good with pork. Don’t forget to eat your additional allowable veggies and optional add rye crisp bread.
