Simply Marinated Mushrooms
mushrooms (protein portion) - shiitake or portabello
1 tsp balsamic vinegar
1 tsp olive oil*
⅛ small onion thinly sliced
⅛ tsp salt
¼ tsp dried parsley
⅛ tsp ground dry mustard
⅛ clove garlic, peeled and crushed
In a large pot, bring water to a boil. Add mushrooms and simmer for 10 minutes. Remove from heat and drain.
In a large bowl, whisk together the olive oil, onion, salt, parsley, mustard and garlic. Add mushrooms and toss until coated. Chill in fridge overnight (at least 2 hours), reheat to serve with steamed vegetables or a salad.
