Fish in Parchment Packet
white fish, such as tilapia or sole (protein portion)
1 slice tomato
2 lightly steamed asparagus spears
diced cilantro to taste
sprinkle of Seitenbacher’s seasoning
sea salt
pepper
parchment paper
Cut a square of parchment paper large enough to hold your amount of fish and fold into a packet. Place the fish on the paper. Add a slice of tomato, asparagus spears, cilantro and seasoning. Wrap fish and vegetables in paper to form a packet. Moisten the outside of the packet. Bake at 350 °F in oven until the parchment turns brown. Serve with steamed carrots or any vegetable on your plan on the side; optional: crispy rye crackers and a serving of fruit.
Note: Total amount of vegetables including tomato, asparagus and carrots needs to be your allotted amount stated in your personal meal plan.
