Zucchini Souffle
2 eggs (protein portion)
¼ onion (or shallots), chopped
zucchini, diced or grated
salt and pepper to taste
chopped fresh parsley
Preheat the oven to 350°F. Lightly beat eggs, stir in the onion and zucchini, and season with salt and pepper. Pour mixture into a non-stick small baking dish, and sprinkle with paprika. Bake in preheated oven for 30 minutes.
