Vegetable Casserole

mozzarella cheese (protein portion)
allotted amount of mixed vegetables on your food list, like: zucchini, button mushrooms, asparagus etc.
Take 1 tsp of olive oil* in a frying pan. Add in some chopped zucchini and button mushrooms or the vegetables you chose, 1 TBSP of chopped onions (or shallots). Sautee vegetables until tender. Add some salt, pepper, garlic powder, basil, and oregano to taste. Place your measured amount of mozzarella cheese on top. Optional you may ground up rye crisp bread and toast on top for a crunchy topping.
