SWEET POTATO STUFFED WITH SAUSAGE, KALE, RED PEPPER, ONION AND FETA

I didn’t really feel like cooking, but I wanted something healthy and satisfying. Isn’t that always the dilemma? This is super easy and simple, it’s fast and it’s really pretty healthy (with some pork sausage and feta cheese to fat it up a bit). 

- 2 sweet potatoes

- ¼ tube of pork sausage

- 1/4 red bell pepper, sliced thin

- ¼ onion, sliced thin

- a few stalks of kale, de-stalked and shredded

- salt and pepper

- a splash of apple cider vinegar 

- feta cheese

/ wash sweet potatoes and prick all over with a fork. microwave for 7-13 minutes, flipping ever 3-4 minutes. it depends on the size of the potato, just keep checking them. they’ll be done when a fork goes easily through the center.

/ in a hot skillet, add sausage, breaking it up into small pieces. when no longer pink, add peppers and onions and sprinkle with salt. toss to mix everything.

/ once peppers and onions are browned, add kale and toss. splash some apple cider vinegar in there and let everything simmer for a few minutes. add a bit more salt and pepper until well seasoned. 

/ split sweet potatoes open with a knife, fill with sausage mixture. top with feta cheese.
