A blog dedicated to cheesemaking, cheese tasting and appreciation and all things cheese and dairy related. The author is currently a cheesemaker at Churchtown Dairy in Hudson, NY and was previously a cheesemaker at Jasper Hill Farm in Greensboro, VT. In addition to the round “Finback Wheels”, I also made these square-format versions of the same cheese. The cheeses actually aged a little bit differently, developing a firmer, slightly dryer paste and a less striated rind.
