Weekend Recap

It continues to amaze me how great I’m feeling. I feel like I’m getting my life back and loving every second.  This weekend was spent regrouping after vacation, visiting with friends, entertaining, cooking, baking, eating and relaxing.  

In case you missed it, I posted Friday’s dinner on Saturday (check out these amazing Mexi Meatloaf Muffins). We had Chris and Laurie over for dinner and then my Aunt stopped by for a visit.  We had a great relaxing evening!

We spent Saturday evening at a lovely dinner party with amazing friends.  The meal was fantastic, and actually very healthy.  Our hosts served grilled chicken that was seasoned perfectly along with a light and flavorful salad with roasted squash, goat cheese and lovely lemon vinaigrette.  Add in the family speciality apple sauce and some bread and I’m a happy camper.  You should go check out Andy’s blog for more great recipes!

Sunday was a day of cooking for me.  I seriously spent most of the day in the kitchen and absolutely loved it! I made myself an omelette for breakfast, a spinach salad with a grilled chicken burger for lunch, smoothies for snack, and chicken cordon bleu pasta with roasted asparagus for dinner.  

But the highlight was baking bread for the first time! In the Greek Orthodox faith, we use a bread called prosforo at church.  It is part of the communion as well as offered after the service. The ingredients are simple (flour, water, sugar, salt and yeast) but it is the most amazing bread.  

Over the past few years my dad has taken to making this bread quite regularly for home use as well as church use. It makes the most amazing toast ever! I’ve been wanting to learn to make it myself, so when Laurie mentioned she wanted to learn to make bread I jumped at the chance to learn together! I had a nice long chat with my dad over the phone and he walked me through all the tricks of making this traditional bread.  It really is super simple, but takes a while to make with two risings, each an hour long.  

The final product was ah-mazing! We enjoyed it fresh out of the oven with some butter and then again as a side dish for dinner (check back later this evening for info on last night’s dinner of chicken cordon bleu pasta!).  As you can see, we are very proud!

I’m really pleased that I planned ahead for the bread and butter and tracked everything! My tracking game has been pretty on point so far. The prednisone makes me so hungry but I’m trying to be proactive and plan ahead.  Over the weekend I made sure to separate my meals so they were smaller and spaced out over the day. I also got in lots of fruits and veggies when I snacked to cut down on the points a bit. 

Today I split my breakfast in two so I ate toast and coffee right away when I woke up, then two hours later I had a smoothie before I left for work. I had lunch at work and packed an apple, pickles and lemon water for an afternoon snack. I’m here till 7 so I didn’t want to be left in a lurch.  I need to run to the grocery store after work and will pick up something easy for dinner. 

I’m still feeling super motivated and I love it! Hopefully the scale responds well on Thursday!  Hope you all had a great weekend!
