Another fantastic dinner courtesy of Trader Joe’s!  I stocked up again the other day and was able to pull this meal together really easily.  

I’ve been working the late shift this week so I don’t get home until about 7.45. This means I need a quick cooking dinner so I can eat dinner before bedtime! Last night’s dinner came together really quickly, was super flavorful and really filling.

For the main course I had two chile lime chicken burgers. I could have had one burger with a bun or two burgers without the bun. I’m trying to avoid gluten (another story for another post) so I opted for open face burgers.  I topped each burger with some fat free salsa, TJ’s Reduced Guilt Guacamole, and TJs fat free sour cream.  I am totally obsessed with the guacamole. It is made with Greek yogurt and is really fantastic.  And TJs FF sour cream is so thick and creamy, it is hard to tell its fat free! 

For the main course I chopped up four raw ounces of TJ’s teeny tiny potatoes, a half a zucchini and a handful of onion. I mixed 2 teaspoons olive oil with some crushed garlic (I’m OBSESSED!) and salt and pepper and tossed it all together.  Then I wrapped it up in a foil packet and had Jeremiah toss it on the grill. The result was great. I got a serving of veggies, two servings of oil, and a whole ton of flavor. 

The whole meal came together for 14 PointsPlus. I call that a win!
