In more positive news, I made myself birthday cupcakes last night! I figured I might as well make something that is low in points that I can plan for, rather than having rich cake and regretting it.
I had made these Pink Lemonade Confetti Cupcakes a few weeks ago and they were great. The pink lemonade adds a tartness that is fantastic and they are sweet enough you don’t need frosting. Plus, they look lovely and festive! This time I added more pink food coloring than is suggests because last time they just weren’t pink enough. And you can never have too much pink, am I right??? So instead of the recommended 2 drops, I think I ended up with 8+!
The recipe is easy peasy and so delicious. They were a hit at work. And the best part? They are only 3 PP each! And for those of you not on WW, they are only 98 calories. Can’t beat that!
