I have been obsessed with coconut basically since I started Weight Watchers. There is something about the flavor that tastes really rich and creamy without being super ridic in PP. I loooove the Edy’s Creamy Coconut Fruit Bars and have one often as a dessert.
Anyway, these had the perfect amount of coconut flavor in them without being ridiculously over coconuty and sweet. The coconut cream cheese frosting was perfection! I love love loved them!
