Dukkah on the left. Idly Podi on the right. I am quite enamoured with dry dips recently. Maybe it’s because they’re so versatile and easy to make. I ground both in the #thermomix. But dry roasted the ingredients individually over the stove. That way I can control temperature and watch carefully. All it takes it just one I ingredient to burn and the whole lot becomes bitter. That being said, I threw out a batch of dried chillies because I got distracted and they charred. Not the “Ooh BBQ flames flavour”, the “eugh, this smells burned…”.
