What I Ate Wednesday? We meet again! And guess what! It is still Febrero, which means its still ze month of loveeee (love for veggies to be exact).

So let’s talk vegetables.

Started my day off with a Pure Protein bar (very processed however very cheap and only 2 grams of sugar per bar!) and a mug of Republic of Tea Get Clean tea. This tea is phenom. Very vanilla-y and scrumptious with a splash of cream. 

For snack before lunch, I munched on celery sticks with peanut butter & carrots with edamame hummus. Does anyone else just rip the celery stalks instead of slicing them? It saves time (this whole snack took me 1 minute to put together) and its all ending up in my belly anyways. ;)

I got a little creative with lunch this week by mixing soup with salad. This here is Campbell Soup’s Creamy Gouda Bisque and a lot of handfuls of spinach mixed together. This picture is pre-heated, but after a few minutes in the microwave, the spinach wilted and they complimented one another perfectly. I used celery sticks as an edible spoon for this: dip, slurp, crunch. I paired my lunch with an orange and a persian cucumber.

I munched on pistachios during my drive home, since I was starved, and with a portion size of 49 kernels, I don’t have to worry about over-indulging!

Dinner was perdy speedy and simple; A honker portion of chickpea hummus (using carrots, broccoli, and cucumbers as dippers!) and pumpkin soup. I know I am getting ahead of myself, but I am psyched for the weather to be too warm for double helpings of soup in one day!

My grand total helpin’ of veggies for the day was probably around 7 servings! Not bad, but definitely could work on reachin’ that magic number TEN.
