Remember dirt and worm cakes from when you were young? They were my favorite, since I was a bit of a tomboy. I remember carefully cutting out a recipe from the newspaper and sticking it to our refrigerator when I was about 7 or 8 right before my birthday, with the express hope of my mother making this for me.
Thought nothing of them until I wanted to make a going away cake for a friend, but I knew she hated cake. Ice cream cake then, but then I thought to myself “What would I have liked when I was 4…” because she can easily identify with this age group. Then it occurred to me that everyone should experience the joy of this cake. I “stealthily” asked her at work what her favourite type of ice cream was. Caramel or ones with stuff in them. My favourites too.
I modified it into mini cakes because of a shortage of forks and plates, or really just no desire to wash that many forks and plates. I then made it more epic desert time with the end result being a shortbread cookie base made with this recipe baked and then cooled then on top we put a dollop of dolce de leche spread followed by toffee crunch iceream, and then sprinkled crushed Oreos on top. Top with worms and voila!
A side note, they take a while to refreeze and gummy worms can be surprisingly hard to find.
They were ridiculously delicious. Trust. I ate probably at least 12 and I’m lactose intolerant so…
