Pizzelles–The Comeback Kid

Pizzeles (the dessert you see above) have made a comeback in my life. Pizzeles are a traditional Italian sweet and are kind of like a mix between a wafer, cookie, and a biscuit. Being from an Italian family, I’m surrounded by these cookies during the holiday season and I used to hate them. I used to think they were really bland and boring but lately it’s the only sweet I crave.

Recently I was rummaging around my kitchen looking for a snack to go with my afternoon coffee when all I could find were some pizzelles my grandmother had made. I wasn’t even sure how long they had been sitting in the pantry for but I took a chance because a) it was the only cookie I could find and b) pizzelles seem to be this magical dessert that never expires. Seriously. Anyway, I actually really enjoyed it! Weird how our tastes can change at the drop of a hat. They’re the perfect dessert to have with coffee and you don’t have to feel so guilty after eating them since they’re pretty light.

I was surprised to find this recipe on the Rachel Ray website since I always associate pizzelles with the older relatives in my family who make them. There’s just this image in my mind that no one under the age of 65 whose name doesn’t end in a, o, i or e can make them. The pizzelle–proving me wrong again.
