After discovering an Argentinian market near my house, I bought a Sodastream and followed Tobystereo’s recipe for a Club Mate-like soda syrup, with a slight alteration to make it less sweet. It was a great success - now I can stop importing 12-packs of the real stuff at $too-much a pop.
Future experiments: carbonation with yeast, carbonation+alcohol with yeast :)
