Several years ago a friend gifted me with a cookbook all about salad dressing. Once I realized how many different kinds of dressing I could throw together from ingredients I already in my kitchen, I set a goal to quit buying salad dressing from the store. I’m happy to report that it’s been my most successful resolution to date.
This is my go-to vinaigrette. Try jazzing it up by swapping all or some of the lemon juice with apple cider vinegar, or juice from a blood orange or grapefruit. Throw in a favorite herb or infused olive oil to play with flavor. The sky’s the limit!
Erica’s Favorite Dijon Vinaigrette
- Juice of 1 lemon
- tsp. or so of dijon or stone-ground mustard
- tsp. or so of honey
- Salt to taste
- Pepper to taste
- 2 Tbsp. extra virgin olive oil
Combine all ingredients in a bowl except olive oil. Pouring in a slow stream, whisk olive oil into bowl, creating an emulsion. Adjust seasoning to taste.
