4 large navel oranges
6 medium-size sweet potatoes (2 ½ to 3 lbs.)
6 tablespoons butter
¼ cup bourbon
2 tablespoons brown sugar
¼ teaspoon nutmeg
¼ teaspoon cinnamon
Garnish: parsley and chopped pecans if desired
1. Cut oranges in half: scoop out pulp being careful not to tear skins. Scallop edges of orange shells using a small knife to make v-cuts.
2. Cook sweet potatoes in boiling salted water in a alrge saucepan for 30 minutes or until tender.
3. Drain potatoes; peel. Place in a large bowl and mash together with bourbon, brown sugar, nutmeg and cinnamon. Beat until smooth and fluffy. Spoon into orange shells. Refrigerate for baking later if desired.
4. Bake in hot oven (400 degrees) for 15 minutes or till heated through. Garnish with parsley and chopped pecans, if desired.
