Happy Easter! 

Enjoy these delicious carrot cake donuts adapted from Brooklyn Farm Girl. Just use Pamela’s baking mix in place of flour. If you have an egg allergy, use Ener-G egg replacer. Omit baking soda and powder. Grease the donut pan. Bake for 15 minutes. 

These can easily be made vegan by substituting coconut oil for the butter, and making the glaze from the original recipe.

Before you clean out your food processor, add cream cheese, a tablespoon of water, and some powdered sugar; pulse to make the frosting.

"I’m going to be a farmer. I know how to grow two types of crops. One crop is the normal kind. The other kind uses aquaponic systems. We have an aquaponic system in our classroom. It has a one ton tank with nine tilapia fish in it. It used to have ten fish but the biggest one died over Christmas break. His name was Frank. Anyway, the water in the tilapia tank gets filtered into another tank, where we are growing kale, hybrid spinach, and lettuce. Afterward, it gets funneled back into the tilapia tank and starts all over again. Everyday we have to measure nitrate, nitrite, ammonia, and one other thing that I forget the name so let’s not mention that one. Anyway, at the end of the year we are going to harvest everything that we grew. Then we’re going to make fish tacos."

I missed you, Tumblr!

It’s been almost a year since I posted anything on Tumblr! I love Tumblr. What happened? Grad school. 

In April 2014, I was elected president of UGA’s PRSSA Chapter. I knew it wouldn’t be easy, but I didn’t realize that how much other areas of my life would develop and change. I’ve seen growth in my personal life, my list of clients, and my commitments for coffee dates. 

I may have overcommitted myself, but I see a light at the end of the tunnel. Graduation, I’m comin’ for ya.

It’s been a wild ride.
