Miriam’s Dessert Pizza

Ingredients: 1x dough ball, 8oz (here’s a video about how to make your own pizza dough) 1 TBS chocolate hazelnut spread 1 tsp Powdered Sugar Thin slices of banana, strawberry OR both!

Step 1: Pull dough from fridge 2HRS prior to bake time Step 2: Preheat oven for 45 min at 450°F if using a pizza stone/steel (normal preheat if using a baking sheet). Place jar of Nutella NEXT TO, not on top of the oven so it softens in the jar. Softening it will enable it to spread more easily onto your curst. Step 3: Stretch dough ball out into a 12” circle, place on peel and use a fork to poke little holes in dough Step 4: Bake at 450°F for 6 minutes, or until lightly golden brown (it shouldn’t look dark like a pizza crust, it’s dessert!) Step 5: Place on plate and apply tablespoon of chocolate hazelnut spread in center, work Nutella and spread over inside of pizza while the crust is hot! (be careful) Step 6: Add fruit, then powdered sugar and you’re done!

Virtual Pizza Making Class

We’re hosting virtual pizza making classes that people can attend from anywhere in the world! Here’s an equipment list and an ingredient list for those who’d like to follow along from home:

Shopping List if You Plan To Make Dough  ⭗ flour (All Purpose is ok, BREAD FLOUR is better) ⭗ 1 yeast packet (Active Dry Yeast or Instant Dry Yeast) ⭗ water (tap is fine) ⭗ salt (fine sea salt or kosher salt is best) ⭗ olive oil ⭗ 1 can whole peeled or crushed tomatoes (or pre-made sauce) ⭗ 1 pound mozzarella (can be fresh, low moisture, pre-shredded) ⭗ 1 head of garlic ⭗ hard cheese (optional) ⭗ toppings (optional)

Shopping List if You Plan To Buy Dough or purchase a pizza making kit from your local pizzeria ⭗ 2x 10 ounce dough balls (or as many as you’d like to make) ⭗ flour (you won’t need much, just a couple ounces) ⭗ olive oil ⭗ 1 can whole peeled or crushed tomatoes (or pre-made sauce) ⭗ 1 pound of mozzarella cheese (can be fresh or low moisture) ⭗ 1 head of garlic ⭗ hard cheese like Pecorino or Parmigiano (optional) ⭗ toppings (optional)

NOTE ABOUT PRE-MADE DOUGH: If you buy pre-made dough, the best stuff comes from your local pizzeria. They pack it better than grocery stores so it will be easier to stretch. Ask the pizzeria when the dough was made and how many ounces are in the dough ball. We may have to cut it down for use at home. If you have to buy from a grocery store, just be careful not to squeeze the dough before we’re ready to stretch it. Either way, you’ll have to let pre-made dough sit out on the counter for 2 hours before the class begins. If you buy frozen dough, let it defrost in the refrigerator for 24-48 hours before the class if possible. Check out this video for some helpful hints for using store-bought dough!

Your Quarantine Pizza Schedule

11am ET Sourdough Start-Along @ Instagram Stories Have you always wanted to make a sourdough starter? Now is the time! I'll be posting a video on Instagram Stories every day at 11am ET so you can play along. All you need is flour, water, and a container (and a kitchen scale if you have one). This takes about 8-12 days and I'll be saving it all as a story highlight if you want to reference it in the future.

3pm ET The Science of Pizza Dough for Kids @ Facebook Hop on the Scott's Pizza Tours Facebook page for a live lesson all about the science of pizza dough. This is intended for elementary school kids but anyone can join. If you want to play along, all you need is flour, water, salt, dry yeast, a bowl, a kitchen scale (measuring cups and spoons accepted), and a dream.

11am ET Sourdough Start-Along @ Instagram Stories On day 2 of our sourdough start-along, we have a dramatic surprise in store for you. It involves stirring.

8:30pm ET Pizza History Online Class @ Zoom (via Brooklyn Brainery) For anyone who has taken a pizza tour with us, this online class is going to take it all to the next level. I'll be presenting some deep cuts about the history of pizza in Naples and NYC. Broadcasting live from my home office, I'll have access to all the photos, books, archival records, and primary sources we don't have on our tours. Tickets are just $5 and available here.

1:30pm ET Pizza Box Collection Tour @ Facebook Live I hold the Guinness World Record for my collection of over 1,500 pizza boxes. They're all amazing, they're all (mostly) unused, and they're all in my apartment. Join me on Instagram as I show you some of my favorites from nearly 100 different countries!

I’m assisting two of my mentors at a 3-day course called Smart Start, hosted by Pizza University in Beltsville, MD. The class will run three days March 9-11 and covers the basics of opening and maintaining a successful pizzeria. We’ll make both American and Neapolitan pizzas while discussing restaurant concepts, marketing, staffing, economics, ingredient selection, equipment use, and WAY MORE! We’ll even make our own fresh mozzarella. This is our second time running the class and we’re so excited to partner with Pizza University for this rare opportunity. Pizza Tour guest Tyler Smith brought an awesome infrared camera on the tour a few months again and sent me all these cool images of the pizzas we ate and the ovens we inspected. Here’s a shot of the pizza at Lombardi’s showing the hot spots (white) and the cooler spots (red). This confirms that cheese is the culprit for pizza burn!
