My Tasty Gluten Free Sunday Breakfast
Something I discovered whilst travelling around Scandinavia last year was that I like smoked salmon for breakfast.
Eating at airports can be a nightmare for coeliacs but I discovered some of the airport cafes offer smoked salmon with scrambled eggs and sliced avocado. So that quickly became my breakfast of choice before flying away anywhere.
At home I add my own twist: a slice of Genius Triple Seeded Bread toasted and I sprinkle the salmon with lemon juice and capers.
For someone who wouldn’t have touched avocado with a barge pole a few years ago this mixture of flavours is quite a revelation.
Tasty, quick to make and fairly healthy too, I highly recommend. :-)

Ah 2016 you’ve been pretty amazing, not only did I travel to some wonderful places but I started a new job that I love with a team who are fast becoming good friends.
Its almost time to enjoy Christmas here in the UK and I love all the pretty lights as evidenced by my recent shots.
Need to plan some more travel though, got that itch to fly away again!
