New Eggplant Recipe

I love to eat and anything with cheese in it is right up my alley! I had a craving for Italian food, and it has been a while, so I wanted to go all out and figure out how to make that Parmesan I loved so much in a fashion that fits my lifestyle.

I couldn’t pin this one down right away and had many trial & errors. My poor boyfriend was probably so sick of eating it over and over but I had figure it out. Finally I made a batch that I think turned out great, or I just think it did. I hope you enjoy it as much as I do and I would love your feedback.

-Ingredients-

2 Sliced Eggplants // Panko // 3-5 LG Garlic Cloves // 1TbL SP Oregano // ¼ Tsp Cayenne // ¼ Cup Almond Milk // 2 Cups Cashews // 1/3 Cup Nutritional Yeast // 1-2 Lemons // 1 Tbl SP Vegan Butter // ½ Tsp Dried Oregano // 1 Cup Fresh Basil // 1 Tsp Arrowroot Starch // 1 Tsp Almond Meal // 2 Tbl SP Go Veggie Vegan Parmesan // ¼ Tsp Red Pepper Flakes // Salt & Pepper // Shredded Vegan Cheese // Large Marinara 18oz // 8oz Can of Roasted Tomatoes

-To Make-

Pre-Heat Oven 375 Degrees

Cheese Filling: Soak the nuts over night if you do not have a high speed blender. Blend Cashews, Nutritional Yeast, Vegan Butter,Lemon, Salt & Pepper, 3 Cloves of Garlic and slowly add small amounts of water to thin out your cheese. You want to blend it till its thick and smooth. Then in a bowl add your Cheese filling, Basil, Go Veggie Parmesan and Red Pepper Flakes and mix together. *Sometimes I like to add a handful of Spinach in my cheese fillings for extra greens

Once your Filling is done you can set it aside and prepare the eggplant. Slice your eggplant ¼ Inch thick. In one bowl mix Panko, fresh Oregano, Cayenne and salt & pepper to your taste. In another bowl mix Almond milk, Arrow Root Starch, Minced Garlic and Almond Meal.

Dip an Eggplant slice into the batter on both sides, allow some of the excess drip off, then dip into the Panko Mixture making sure both sides are well covered. Place on a greased baking sheet or parchment paper and bake for a 10 minutes to just crisp the outsides. 

While thats baking gather your cheese filling, marinara and vegan cheese to prepare for the assembly! Take an Eggplant slice drop a few large spoonfuls of our cheese mixture on top, along with a spoonful of marinara and then another Eggplant slice.

We will then top all with Marinara and sprinkle shredded Vegan Cheese on top. You will want to cover it with foil and bake for 35 minutes. Remove the Foil, add a spoonful of the roasted tomatoes and bake for 10 more minutes.

Remove from the oven and let cool for 10 minutes, then serve. It definitely helped with my cravings and I am hoping it will help with yours as well.

A Romantic Los Angeles Wedding.

Janet and Nelson’s romantic ranch style wedding took place in Los Angeles, California on a beautiful Saturday afternoon. The Ceremony was held at the Cathedral Chapel of St Vibiana, one of the oldest Churches in the area, and the Reception at Calamigos Equestrian. This fun couple wanted a place that fit there wedding vibe and somewhere that was special to both of them.

The ranch inspiration comes from their admiration of living a quiet and simplistic country like lifestyle. From the tradition of their church ceremony to the fun country vibes, everything about the day was about love, family and romance. This let them focus on what the day was really about - each other. I was there to capture the day and want to share some of those magical moments.

Your Bridesmaid Luncheon

Summer is still here  & so is party season.  Weddings can be so much fun but lets us not forget all the parties that happen before that!  

A bridesmaid luncheon is a great way to thank your bridesmaids for being part of your wedding party.  It’s also just a fun excuse to gather all the ladies together one more time before that walk down the isle.  

Typically held a few days within the wedding, it can be a casual event but to   make it a little more interesting pick a fun theme or a unique setting. Have it be something everyone can enjoy, remember this is for your bridesmaids and other females you are wanting to honor.
Traditional etiquette only requires that the bridesmaids, mothers, and flower girl, along with mother are invited. However, more modern brides also invite other close women to the celebration.

These lunch affair serves an array of tea’s and treats, including finger sandwiches, fruits and pastries. In my opinion it is best to keep it light but that does not mean you cannot have fun with it. Serve some fun champagne cocktails or have your guests dress up for the theme of your party. Remember this time is about sharing stories and having some laughs.

Normally the bride will give a speech thanking her bridesmaids and guests of honor for there support through out the planning process.  There is a lot that goes into planning the perfect weddings and friends & family have been there helping with decisions or sometimes just for moral support.

This is also a chance to give small gifts or tokens of appreciation to your wedding party.  So pop open that champagne and speak from your heart!

Use your imagination and allow that to create something magical for your fellow women. Regardless of what you choose as a theme or what venue to host it at, there will always be a good time with your ladies when there is champagne and tasty treats!

Let’s Meet Trés Belle Cookies

Im excited to share my day with Michelle of Trés Belle Cookies, not only is she a blast to hang out with, her desserts do not disappoint and I look forward to them every time!

Trés Belle Cookies is all about small desserts for all the events in your life. “I do everything from favors for parties and weddings, to full dessert buffets for events. My focus is on using high quality fresh ingredients and baking in small batches to maintain quality and consistency.” 

Michelle has had a passion for baking since she was young. Over the years she took classes, studied the masters of the pastry arts, and worked hard to hone her skills. “I read cookbooks like novels. At the holidays, I would create huge platters of beautiful cookies and give them away to my friends and family, or take desserts to dinner parties.” 

While at a planning meeting for an event, to discuss the menu, the big questions from everyone else’s mouth was “Why aren’t you getting paid for this?” This is how she knew she could make a business out of baking, and that event gave her the push she needed.

“I’m all about re-working recipes and making them my own, especially when it comes to flavor. If a dessert looks beautiful, but the taste is just okay, you aren’t likely to order that again. It’s all about how can I kick it up a notch, I want the taste to be memorable and stay with you. There’s nothing better than watching someone take a bite of one of my desserts and watch their eyes close and see that moment of bliss on their face.”

Every person starting their own business comes into troubles & has things they must learn,  learning how to market in a social media driven world has been one of Michelle’s.  “It’s been a learning curve for me in where to put my focus, and how much time to spend on it. I’m fortunate that I have a lot of people around me willing to offer advice and suggestions on how to promote myself in today’s market. There are so many options out there.” 

One of her goals is to grow her event and wedding business, she has expanded her business by carefully creating a more developed menu. Now ready to offer a wide variety of dessert options for buffets, which is really the trend for most events.

“When I’m not on Pinterest or some other food-related website, looking for inspiration or the next dessert to tackle? I really love to read, and now that it’s getting nice out I will be out in my garden, coaxing my plants into blooming.”

Some future plans are coming! Michelle is looking at different options for taking a baking class overseas, combining her holiday’s with learning. I know I am excited to see what she learns.

Believe me these cupcakes were so moist and just as delicious as they look! I really love the use fresh and natural ingredients, you can taste the difference in quality. I’m Back...

For those of you who don’t know me, my name is Teresa Nuñez of Nuñez Photography. I shoot Weddings, Boudoir & Fashion, love to be a crazy cat lady and will eat anything chocolate. I took a small break from posting, honestly, just to catch up! 

While still getting settled into my new life rhythm and starting a photography business, in a new area, there was lots to do. Along with my own obsessive compulsions for everything to be done immediately I definitely created some of the chaos. So while catching up on editing, doing branding touch ups, getting new systems in place and just being a human, this past year or so has been full of transitions in my life & business mentally, physically and even spiritually.

It took much longer to settle in our new home than expected, next time I move states I will definitely be more prepared. Not just the time it takes physically but mentally too, I was on the same style of schedule for almost 8 years with working at the same bar and doing my photography when I could. It took a lot to undo this normalcy I once had and move it to something new & better. It took a year until we could even get the rest of our belongings shipped over and once it did, it was almost like moving all over again. The clutter and mess, as well as the anxiety that comes with it, the need to have everything finished overwhelmed me. But once everything was organized and set up, my life started to feel normal again. There are still odds and ends to always finish but how nice it it feels to be able to move on to other tasks and to give my business my full attention.

After graduating college 7 years ago I wasn’t too concerned on starting a business it was more for the love of creating and finding my next inspiration. I assisted several great photographers, interned in photo studios, loved creating & shooting fashion concepts. Eventually it came the point where I wanted to really build my own business. The constant trial and error was frustrating, especially when a lot of my time was working at a bar to supplement my income. The money was good and gave me flexibility to peruse my own work, but the cost of living was high so most of my time was going into working to pay bills and help me financially with my photography.  

Moving was the next step in being able to build, the move alone was a lot, but worth it! Eventually it gave me more time not only for my business but for my life, to grow in health and spirituality.  All of it was connected and gave me the proper tools to figure out what the heck I was doing. My time became consumed again but in a positive way, I learned to love and appreciate my errors as they gave me strength. I was able to connected more with others (which is a whole other embarrassing post for me), to read & research and of course partake in the trial & sometimes error portion of it all. The more I learned and tried the more I loved it, even in frustration.

As people we should be transitioning often, always trying to better our self in ways only you can understand.  When things don’t work the first time reassess the situation and try another angle. I like to imagine myself boxing, bobbing and weaving, throwing punches but sometimes you just keep getting hit and have to readjust your approach. You may not win the fight but how and what you take from it will define your next step. We all have hardships, some more than others and we each go through these times to progress to the next faze. It really is about how you handle yourself in those dark or frustrating situations.

Regardless of who you are and where you come from there will be a struggles, I am thankful there was, without them it can be hard to be appreciative or grow. Maybe you don’t learn anything at all or created some of the issues for yourself, I have been their too. Some “lessons” took a couple times before I could hear past the fear to what my gut was trying to tell me.  Don’t let that fear hold you back, let it fuel you. Learn to listen to yourself, it’s not always easy deciphering through the negative thoughts to find what your inner self is trying to tell you. But please do, if its scary for you push though, all these things will help you not only for your business but in life.

Lets Meet: Forest & Field

This week we are meeting with Bailey River of Forest & Field.  A culmination of two, Bailey and her husband Johnny wanted their jobs to be their life, in a life-giving way.  They currently reside in Portland, Oregon as they prepare their 20 acres of un touched land for there dream of helping and healing others.  

We walked around her neighborhood and she showed me a little about foraging, it was great seeing how we can forge not only in raw nature but also in our own back yards.  She describes the business as “an ever-evolving culmination of everything I’m passionate about and everything I want to share with the world. It combines nature, design, healing, emotional connection and curiosity. From Floral Design and Herbal Medicine to Nutrition and Relationship/Individual Coaching. My business is ME and my story of pursuing that which brings me joy and meets my need to contribute and create.”

Seven years ago at the age of 21,  Floral Design for Weddings was Forest & Field’s beginning.  -  “I’ve always been more creatively minded (I had a hard time in school) so I knew I would end up pursuing something in that realm. Besides meeting my need to be creative Floral Design also gave me freedom to set my schedule and pursue all the other certifications I now hold. I attended the Floral Design Institute in order to get the ball rolling and have now done over 100 weddings in the last 7 years. During this time I’ve also completed 2 years of Herbal Medicine training, obtained a Nutritional Therapy Practitioner Certification and now a Strategic Intervention Coach Certification. Deep health of body and mind have always been important to me because it shapes how we live our lives and how we feel day to day. I’ve always desired to bring beauty, vitality, energy, joy, physical health, mental health and emotional well being to people while connecting them with something and empowering them to take care of themselves in these ways. It feels really good to facilitate that in all the ways I do!  I studied Herbal Medicine and Nutrition because my immune system failed me for a year and the doctors couldn’t help me. It was at that moment that I knew I had to learn these things on my own and see what nature and food had to offer. On top of that there was a HUGE emotional piece that I needed to bring to the surface in order to heal fully. Strategic Intervention Coaching has given me that final piece and helps me interact more intentionally with clients in all my business endeavors. The newest addition to our business is Relationship Coaching. Johnny and I have been married for 8 years and are incredibly passionate about helping people discover what a motivating, intentional, epic life partnership can be like.”

“As a young child I was always trying to gather people together, create space with plants/decor, understand people's emotional psychology and discover how to be the best and most epic person I could be. I love teaching and sharing. When I started meeting with clients for Floral Design I had no idea what I was doing, but I found that confidence came natural to me and I basically “faked it till I made it. Working with clients in that realm and setting up massive weddings made me realize how much I like that control and the ability to be a confident leader. So my favorite part of Floral Design, Herbal Medicine, Nutrition and Coaching is that I get to make huge things happen, create space and teach/share. I’ve led workshops like Wreath Making, Floral Design, Nutrition Retreats, Herbal Medicine making and now Relationship Coaching. I love the energy that comes with the feeling of teaching and creating something epic.”

Every business owner faces their own challenges and many of us deal with a lot of the same issues. So when asking Bailey of her challenges in her business I could definitely relate to what she said. ”I’ve done A LOT of learning. It’s been one of the biggest challenges but also my greatest success because I didn’t let it stop me from pushing forward. Financial stability is also a common one. Johnny has begun studying finance and investing and the Coaching certification has given me a whole new level of confidence that I believe will bring the financial stability we desire in the near future. I think it just takes a lot of devotion and hunkering down to learn the system. And lastly, organization. This has been difficult because we’ve had a hectic living situation and just recently got a work studio that is separate from our home. We finally realized that spending a little bit of money on space may actually help with organization and financial stability because it can bring peace of mind and the knowledge that you’re investing in yourself, which makes you a more successful and confident person I think.”

In their free time Bailey and Johnny like to read, drink coffee, have deep discussions about life and love walking their goats. “I LOVE to dance, I think that’s my favorite thing. I usually Pole Dance every day which includes a stretching and workout routine before and after. I love cooking, singing, sauna, writing and a good coffee date with a friend.”

As for the future they see their work becoming more integrated. She intends to focus on emotional wellness and coaching. As far as floral design goes,  narrowing her niche to only take on jobs that have life to them. “I have an inability to do a job without an intense emotional connection and vision. Johnny and I bought property last year so I hope to grow some plants for design and medicine. I’ve also combined my herbal medicine and floral design by offering a new package where I forage medicinal plants, use them in the wedding arrangements and then make them into medicine afterward to send to the couple. That’s one way I’ve integrated my businesses.” As well as focusing on her Herbal Medicine company and Nutrition,  heavily on mood and emotional issues.

‘The ultimate goal is to have a “retreat center” of some sort on the property so people can come and have a full experience and get away from their daily life. I feel like change happens when we uproot ourselves and try new things. Well, a year from now Johnny and I are going to Europe and then possibly traveling for a few months. Until then we plan on focusing a lot of energy on Relationship Coaching and trying to get ANY speaking engagement we can find. We are determined to become experts in that arena. We may also build an off the grid cabin on our property so that we have somewhere to stay out there.’

Porras Engagement Session

I was able to head back home and shoot an awesome couple around a favorite spot of mine in Whittier, CA. They met at a birthday party through mutual friends and from there the rest was history. Take a look into Nelson & Janet's story and fall in love.

Our Proposal Story.

About a month before the proposal, I had the engagement ring ready for the big moment, but didn’t know how or when to propose to her.  

We’ve been trying plan a nice and quiet getaway for months, but we couldn’t stay for an entire weekend, so we decided to take a one day turnaround trip to wine country.  Our jobs can be pretty demanding and somewhat stressful, so we couldn’t wait for this particular weekend to see each other and get away from the hustle and bustle of city life.

After putting some thought into how to propose, I did some research.  I wanted it to be a quiet and semi-private setting, so I picked a restaurant at a winery that had exactly that.  It was small and quaint with al fresco dining surrounded by stunning vineyards and gardens.  I wanted us to dress up nicely, but I didn’t want her antennas to go up, so I simply told her it was going to be a high end restaurant and we should wear something more formal for dinner.

After a fun filled day in wine country the sun began to set, so I mentioned we’d have to leave soon.  She said okay, and off we went.  When we arrived at the restaurant, we went separately to change.  I wasn’t really nervous, but as soon as we met back in the restaurant lobby, I saw her standing there and thought to myself “Wow, she looks so beautiful.  I hope I don’t screw this up”.  The host already knew of the plan, so she was very helpful and accommodating.

After being seated in perfect view of the vineyards and gardens, I began to feel the butterflies.  Then, I excused himself, saying I needed to use the men’s room and would be right back.  So I sped walked back to the car to retrieve the ring, but then I had a slight problem.  The ring box was too big to fit in my coat pockets, and too big to fit in my pants pockets without being noticeable, so I had to improvise on the fly.  I stuffed the ring box in my front pocket and walked back to our table with my hands in my pockets.

After ordering some wine and appetizers, I couldn’t wait any longer, so I suggested we take a little walk though the beautiful gardens.  She said ok, and off we went.  As we walked through the gardens, one hand holding her hand and the other in my pocket holding the ring box, we came to a beautiful gazebo and next to it was a pond and fountain.  This was it.  It was right about here where everything became quiet, and when she looked away for a few seconds, I dropped to one knee and pulled out the ring box.  She looked pleasantly surprised, and I was immediately overcome with emotion.  It took me a minute to compose myself and ask the question, but eventually I did, and she said “A million times YES!”  

I think it was the realization that our engagement meant so much all at once. It was, and is, the culmination of years of self-exploration, and learning to hold true to myself and the man I am, as well as the culmination of years of learning to communicate well and openly, and working hard toward a solid relationship.  This proposal was the reward for each of us, for the promises we kept for ourselves, and for each other.

I felt a peace wash over me and between us.  After she said yes, I stood back up, took the ring and placed it on her finger.  I shouted with joy, kissed her, hugged her and we held each other for a good while.

What is your wedding inspiration, theme & some details? Our wedding theme is romantic country.  The inspiration comes from our admiration of living in a quiet and simplistic country like lifestyle.

What is your fav thing to do together? I would say cozying up on the couch with some delicious comfort food, a bottle of wine and a good movie. 

How do you two spend your free time? Aside from cozying up on the couch, we also like to visit some of our personal favorite restaurants.

How has the wedding planning been for you? Although we are very busy in many aspects of our lives, I think we are managing pretty well.

Any Honeymoon plans? Yes, we are planning a nice and quiet beachside honeymoon in Mexico.

Should I Hire a Makeup Artist?

Yes, the answer is always yes! In planning your wedding or event hiring someone who can give you the look you want & accentuate your beauty is key. Especially when is comes to your photos, a professional makeup artist is skilled in knowing what works for every situation & equipped to handle it.

I am always up for new ways to DYI and save some extra money, but unless you are highly experienced in the field of cosmetology I say stick with the pro. Even when going for a natural look, you still want to glow. Not only are you paying good money for professional photographs you also have a full day ahead of you and want it to last.

Hiring a hair and makeup artist will help your day run smoother and you will  look flawless while doing so.  When getting your photograph taken there are certain techniques to help accent your features, the photographer will love you for this.  I have had weddings and even some engagement sessions where you can see improper makeup or bad hair applications. This can be devastating after hiring a photographer to capture your memories.

So I say don’t risk it, let yourself be pampered! Not sure on how to go about it, here are a few tips to help.

1.  Take a look through their portfolio. Most have websites or electronic profiles you can look at in the comfort of your home.  Each bride has a different idea for there day so find the artist who fits your vibe.

2. Referrals. A good word of mouth can go a long way.

3. Social Media. You can find many different artists and their work at a click of a button.  

4. Do a trial run. You will want to see how your makeup will look before the big day, that way you can make changes before its too late.

You can also talk with your photographer, more than likely they have a handful of artists they trust and work with often.  One of my personal favorite artists is Marylu Gomez, she is amazedly talented.  Not only is she reliable, Marylu is very versatile which can go a long way in the world of weddings. Hiring a good team to work together is what allows myself as a photographer to create my magic for our clients.

Vegan Enchiladas

I LOVE Love LOVE Enchiladas! My mom originally taught me how to make them when I was a teenager, they are my dads favorite and soon became mine. So I had to learn, more because she made me ha ha, but I am so happy I did. When choosing to live a mostly plant based lifestyle I knew I had to make my favorite meal into a Vegan version. So here is somthing I love to make in bulk and they taste even better the next day. Hope you enjoy!

-INGEDIENTS- 

10 Large or 15 Small Ezekiel Tortillas (or can use corn just fry in pan slightly before rolling in sauce), 2 cans Hatch Green Chili Enchilada Sauce & Shredded Vegan Monterey Jack

Filling: 2 Cups of Cashews or Sunflower Seeds (soaked overnight if you do not have a high power blender), 1/2 Tbls Oil, 1/4 cup of Nutritional Yeast, 2 Tbls Lemon Juice, 3 Garlic Cloves, 1/2 Tsp Salt, 1/4 Tsp Pepper, 1 Cup Spinach, 1 Can of Black Beans, 2 Cups Mushroom, 4-5 Sliced Mini-Peppers, 1/2 to Whole diced Jalapeño, 1/2 Cup Onions, 1/3 Cup Cilantro

-MAKE-

Pre-Heat Oven 350 Degrees

Filling: Soak the nuts over night if you do not have a high speed blender. Blend Cashews or Sunflower Seeds, Nutritional Yeast, Lemon, Salt & Pepper & Garlic, add small amounts of water to thin out your cheese. You want to blend it till its thick and smooth.

Take the rest of the filing ingredients and mix all in large bowl. Once the Filling is ready take a can of your Hatch sauce, pour a 1/3 into the bottom of your baking  dish. Take another dish and pour the rest of the sauce in, this is where you will be dipping your tortillas before you roll them. Make sure sauce covers both sides of your tortilla after dipping, then place in baking dish & fill.

Spoon mixture filing into the tortilla and roll. Repeat until you have filled all of your tortillas, then pour your remaining can of Hatch Chili Sauce over the top of your Enchiladas & Sprinkle your Vegan Cheese on top.

Place in the Oven and cook for 30 minutes or until your cheese is melted on top.  Then take dish out of the Oven and let cool for at least 5 minutes. I love to top it off with my favorite salsa and a side of Spanish Rice!
