Recipe! Salsa crockpot chicken

Ingredients:
  • 2 pounds boneless, skinless chicken breasts (I suppose you could use thighs, but I just don’t like them!)
  • 1 (16 ounce) jar salsa, whatever your favorite flavor or variety
Prep:

Combine in a 3-4 quart crockpot and cook on low for 4-6 hours, until chicken is tender and thoroughly cooked. You can also dump the raw chicken and salsa in a freezer bag, and freeze for later. Just take it…

How I got here

On June first of 2013 l tried on my bridesmaid dress I was supposed to be wearing at the end of the month. It fit… but it did NOT look good. So I started out to lose 10 lbs. I decided when I hit that 10lb mark I was going to reward myself with my first Alex & Ani bracelet. Hi I can't believe your transformation. You are so beautiful before and after. But starting is extremely hard. Every time I start to eat right I last maybe a day or two. What can I do to not quit so fast?

Thank you so much! For me, not quitting, was 100% mental. I started and failed many times. What worked this time was getting my head in the game, getting the support of family and friends, setting small goals, and doing something everyday to work towards that goal. I started out walking 3 days a week. Then I worked up to interval running (zombies, run! is a really fun app!) and then I started using T25 and began to really build muscle! And of course I tracked my calories with Myfitnesspal. I was a horrible stress eater, and I had to relearn how to eat for fuel and not for emotions.

I am oddly uncomfortable posting this

I shouldn't be, but I am. I think it's because of Mean Girls.

because yes, there are mean girls out there. Full grown women who say things to hurt other full grown women. 

So one of the things I've learned on this journey of mine is that it's a lot easier to work on a body you love than a body you hate. It is possible to love your body, but want to make it healthier and stronger. Learning to do so can be hard. Society, the media and our peers like to point out any little detail that they deem to be off, and it's so hard not to focus on all those things you don't like. 

So take a minute once in a while and think about all the great things about your body. Here's my list.

1. My lips. My bottom lip is a slightly darker shade than my top lip, I don't know why, but I think it's interesting. They're full and plump and perfect for kissing cheeks and necks.
2. My skin. It's pale and not overly fond of the sun but I like the way it freckles up just the teensiest bit. My skin is peachy and feels nice. 
3. My eyes. They're wideset, hazel with yellow starbursts in the center. 
5. My boobs. They may not be what they once were, but these cozy pillows helped 3 babies pack on the pounds, grow big and strong and smart. My body nourished 3 human beings. That's amazing.
6. My butt. It's comfortable to sit on. Without it, my back would be sore.
7. My birthmarks. Notably, the cafe au lait spot on my back, the mole on my hip and the beauty mark on my cheek. I think they're sassy. I also have a stork bite at the nape of my neck that all three of my kids have as well. I love that we share that.
8. My legs. They can carry me further and faster than before. They are strong and have the potential to be stronger and faster.
9. My nails. My nails curve nicely and are a fantastic canvas for pretty colors. Painting them relaxes me and seeing happy colors on my hands always brightens my mood.
10. My hips. My hips love to move to music. I was once told that I move my hips too much when I dance. Is that possible? C'mon!

It was harder than I thought it would be to come up with a list. What's on your list?

#GrinderGlamChallenge Strength in me! There are so many things I can do now that I once was so scared of. I once thought that I would never run for fun. Burpees?! No f*cking way! (don't get me wrong, my burpees are UGLY, but I can do them) I've come a long way. Not only is my body stronger, but my faith in myself is a lot stronger too.

Why is starting so hard?

Starting is hard. Starting a blog is hard. Starting to exercise is hard. Starting to eat right is hard. You know what’s even harder? Sticking with it. 

In 6 months, I lost 60lbs. I ate right and worked out. Once I got going, it wasn’t so hard anymore. Now, I need to keep it up. I need to stick with it and continue to live a healthier life. I’m hoping that writing about it, and with any luck inspiring others will help keep me motivated.
