As promised, here’s the making of the pumpkin cheesecake pie. We used our favourite recipe, from the sublime I Breathe I’m Hungry blog. It’s low carb, gluten-free, sugar-free and tastes utterly incredible. Like October, in pie form. Click here for the recipe.

We use a 50/50 mixture of Splenda and Xylitol for our sweetener (the combination somehow manages to eradicate any sweetener aftertaste - seriously, you’d never know this is sugar free.) And we added some crushed pecans into our crust because that’s how we roll.
