MIRACLE CHICKEN SKILLET

PREP TIME: 10 min. | TOTAL TIME: 45 min.

MAKES: 4 servings

WHAT YOU NEED

1-1/2 cups instant white rice, uncooked

1-1/2 cups fat-free reduced-sodium chicken broth

1/4 cup MIRACLE WHIP Dressing

1 Tbsp. chili powder

4 small boneless skinless chicken breasts (1 lb.)

1 tomato, chopped

1/2 cup KRAFT Shredded Cheddar Cheese

MAKE IT

MIX first 4 ingredients in large skillet. Top with chicken.

BRING to boil; cover. Simmer on low heat 25 min.

TOP with remaining ingredients. Cook 10 min. or until chicken is done (165°F).

Purchasing and Storing Fresh Chicken: Remember these food safety tips when purchasing fresh chicken. First, put fresh chicken into your grocery cart just before checking out of the store. Make sure the chicken is very cold to the touch and the package is not torn or leaking. Place chicken package inside a plastic bag before placing in the grocery cart to keep any juices from touching other food items. At home, immediately refrigerate chicken and use within 2 days. Or, overwrap with heavy-duty aluminum foil or freezer paper and freeze for up to 6 months.

MAKES: 16 servings, 1 Tbsp. each

WHAT YOU NEED

1 head garlic

1 tsp. olive oil

1 cup MIRACLE WHIP Dressing

2 tsp. fresh lemon juice

MAKE IT

HEAT oven to 400ºF.

CUT thin slice off top of garlic head to expose tops of all cloves; drizzle with oil. Wrap in foil. Place on baking sheet.

BAKE 20 min.; cool 5 min.

SQUEEZE roasted garlic into small bowl; stir in dressing and lemon juice.

SERVING SUGGESTION 

Serve with smoked sausage, grilled vegetables or as a spread for crostini.

SHORTCUT 

Substitute 4 minced large fresh garlic cloves for the roasted garlic.

Creamy Homemade Macaroni & Cheese with Bacon

Total Time: 25 min

Makes: 10 servings, 1 cup each

WHAT YOU NEED

1 pkg. (16 oz.) elbow macaroni, uncooked

2 Tbsp. butter or margarine

1 onion, chopped

2 Tbsp. flour

3 cups milk

1/2 cup MIRACLE WHIP Dressing

1 cup KRAFT Shredded Cheddar Cheese

1/4 cup KRAFT Grated Parmesan Cheese

2 tsp. Sriracha sauce (hot chili sauce)

8 slices OSCAR MAYER Bacon, cooked, crumbled COOK  macaroni as directed on package, omitting salt.

MAKE IT

COOK macaroni as directed on package, omitting salt.

MEANWHILE, melt butter in large saucepan on medium heat. Add onions; cook and stir 2 min. or until golden brown. Stir in flour; cook 2 min., stirring constantly. Whisk in milk, then dressing. Bring just to simmer, stirring constantly; cook and stir 2 to 3 min. or until thickened. Add cheeses and Sriracha sauce; cook and stir 2 min. or until shredded cheese is melted.

DRAIN macaroni. Add to sauce with bacon; mix lightly.

SUBSTITUTE

Prepare using MIRACLE WHIP Light Dressing.

Thai-Style Peanut Noodles

TOTAL TIME: 20 min

MAKES: 4 servings

WHAT YOU NEED

½ lb. thin linguine, uncooked

2 tsp. sesame oil

¼ cup MIRACLE WHIP Dressing

¼ cup PLANTERS Crunchy Peanut Butter

2 Tbsp. chopped fresh cilantro

1 Tbsp. chili-garlic sauce

¼ cup rice wine vinegar

MAKE IT

Easy Banana Bread

WHAT YOU NEED

1 egg

½ cup MIRACLE WHIP Dressing

1-1/3 cups mashed fully ripe bananas (about 3)

1-1/2 cups flour

1 cup sugar

½ cup chopped PLANTERS Walnuts

1 tsp. baking soda

1 tsp. salt

MAKE IT

HEAT oven to 350ºF.

BEAT egg, dressing and bananas in large bowl with whisk until blended. Mix remaining ingredients. Add to banana mixture; stir just until moistened.

POUR into 9x5-inch loaf pan sprayed with cooking spray.

BAKE 1 hour or until toothpick inserted in center comes out clean. Cool in pan 10 min.; remove from pan to wire rack. Cool completely.

PREP TIME: 10 min | TOTAL TIME: 40 min

MAKES: 16 servings, 1/2 cup each

WHAT YOU NEED

½ cup MIRACLE WHIP Dressing

1-1/2 tsp. curry powder

8 cups small cauliflower florets (about 1 head)

¼ cup water

2 Tbsp. chopped fresh chives

MAKE IT

HEAT oven to 400°F.

MIX dressing and curry powder until blended. Add to cauliflower in large bowl; toss to evenly coat.

POUR water into 13x9-inch baking dish. Add cauliflower.

BAKE 30 min. or until cauliflower is tender and golden brown. Sprinkle with chives.

Curry powder is actually a blend of up to 20 different spices, herbs and seeds. For a spicier curry dish, choose Madras curry powder. Curry powder can lose its pungency after long storage. For best flavor, store it in an airtight container in a cool dry place for up to 2 months.

1 cup finely chopped cooked chicken

½ cup finely chopped red apples

¼ cup raisins

CURRIED CHICKEN PITA BITES

Prepare as directed, substituting 16 mini pitas, cut in half, for the endive leaves and filling each pita half with 1 Tbsp. chicken mixture. Top with sour cream.

MAKE AHEAD

Prepare recipe as directed, but do not top with sour cream. Arrange in single layer on platter. Refrigerate up to 2 hours. Top with sour cream just before serving.

SUBSTITUTE

Serve with your favorite crackers instead of the endive leaves.

WHAT YOU NEED

¼ cup MIRACLE WHIP Dressing

¼ tsp. curry powder

1 pkg. (6 oz.) OSCAR MAYER Deli Fresh Oven Roasted Chicken Breast

½ cup chopped fresh mangos

¼ cup chopped red peppers

1 Tbsp. sliced green onions

2 spinach-flavored tortillas (8 inch)

MAKE IT

MIX dressing and curry powder until blended.

ADD all remaining ingredients except tortillas; mix lightly.

Spicy Fish Tacos

What You Need

4 tilapia fillets (1 lb.)

¼ cup MIRACLE WHIP Dressing, divided

2 cloves garlic, minced

1 tsp. chili powder

4 radishes, thinly sliced

1 jalapeño pepper, seeded, finely chopped

3 Tbsp. chopped fresh cilantro

2 Tbsp. lime juice

3 cups coleslaw blend (cabbage slaw mix)

8 corn tortillas (6 inch), warmed

1 avocado, chopped

Make It

HEAT oven to 350ºF.

PLACE fish in single layer on baking sheet sprayed with cooking spray. Mix 1 Tbsp. dressing, garlic and chili powder until blended; spread over fish.

BAKE 20 min. or until fish flakes easily with fork. Meanwhile, combine remaining dressing, radishes, peppers, cilantro and lime juice. Add to coleslaw blend; mix lightly.

FLAKE fish; place on tortillas. Top with coleslaw and avocados.

Prepare using cod fillets.

What You Need

2 Tbsp. MIRACLE WHIP Dressing

1 tsp. Sriracha sauce (hot chili sauce)

4 slices Italian bread, toasted

2 peaches, thinly sliced

6 slices cooked OSCAR MAYER Bacon

1/2 cup tightly packed arugula

Make It

MIX dressing and Sriracha sauce until blended; spread onto toast slices.

FILL with remaining ingredients to make 2 sandwiches.

Add 1 minced garlic clove to MIRACLE WHIP mixture before spreading onto toast slices.

Grilled Portobello Sandwich

What You Need

1 portobello mushroom, gills removed

1/2 red pepper

1/4 cup marinated artichoke hearts, drained with 1 Tbsp. marinade reserved, divided

2 slices  Italian bread, 1/2 inch thick

1 Tbsp. MIRACLE WHIP Dressing

2 tsp. pesto

1 KRAFT Provolone Cheese Slice

Make It

HEAT grill to medium heat.

BRUSH mushroom and pepper with reserved artichoke marinade. Grill 5 min. on each side, brushing with any remaining marinade for the last few minutes.

MEANWHILE, grill bread 1 to 2 min. on each side or until lightly toasted on both sides.

SLICE mushroom and pepper. Spread 1 toast slice with dressing; spread remaining toast slice with pesto. Fill toast slices with grilled vegetables, cheese and artichokes to make sandwich.

SUBSTITUTE

Substitute KRAFT Zesty Italian Dressing for the reserved artichoke marinade.

MAKE AHEAD

Vegetables can be grilled ahead of time; cool, then refrigerate up to 24 hours. Reheat in microwave before using as directed.

WHAT YOU NEED

4 hard-cooked eggs, chopped

¼ cup  MIRACLE WHIP Dressing

2 green onions, sliced

5 stuffed green olives, chopped

2 tsp. finely chopped roasted red peppers

1 tsp. GREY POUPON Dijon Mustard

4 slices Italian bread, toasted

MAKE IT

COMBINE all ingredients except toast slices.

WHAT YOU NEED

2 cans (5 oz. each) chunk light tuna in water, drained, flaked

1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken

1 cup KRAFT Shredded Mild Cheddar Cheese

3/4 cup water

1 carrot, shredded

1/3 cup KRAFT Real Mayo Mayonnaise or MIRACLE WHIP Dressing

2 Tbsp. CLAUSSEN Sweet Pickle Relish

MAKE IT

COMBINE ingredients. Refrigerate 10 min.

HEAT large nonstick skillet sprayed with cooking spray on medium heat. Use ice cream scoop to add 1/3-cup portions of tuna mixture, in batches, to skillet.

FLATTEN into patties with back of spatula. Cook 6 min. or until golden brown on both sides, carefully turning patties after 3 min.

WHAT YOU NEED

1/3 cup MIRACLE WHIP Dressing

2 Tbsp. lemon juice

1/2 tsp. smoked paprika

2 cans (5 oz. each) white tuna in water, drained, flaked

1 can (15 oz.) chickpeas (garbanzo beans), rinsed

1 stalk  celery, chopped

1/4 cup finely chopped red onions

2 Tbsp. finely chopped fresh parsley

MAKE IT

MIX first 3 ingredients until blended.

COMBINE remaining ingredients in medium bowl.

ADD dressing mixture; mix lightly.

Chipotle-Turkey Burgers

PREP TIME: 30 min.

MAKES: 4 servings

WHAT YOU NEED

1/4 cup MIRACLE WHIP Dressing

2 Tbsp. finely chopped canned chipotle peppers in adobo sauce

1 lb. 93%-fat-free ground turkey

1/2 cup chopped green peppers

1 tsp. garlic powder

1 red onion, cut into 4 slices

4 hamburger buns

MAKE IT

HEAT grill to medium heat.

COMBINE dressing and chipotle peppers.

MIX turkey, green peppers, garlic powder and 2 Tbsp. dressing mixture just until blended; shape into 4 (1/2-inch-thick) patties.

GRILL 6 to 7 min. on each side or until done (165ºF), adding onions to the grill for the last 5 min. and grilling until charred, turning after 3 min.

PLACE burgers on bottom halves of buns; top with remaining dressing mixture and onions. Cover with tops of buns.

SPECIAL EXTRA

Grill burgers as directed. Top each with 1 KRAFT Singles; grill 1 min. or until melted. Continue as directed.
