I can’t come to Portland and not hit Salt & Straw for their amazing ice cream…

Yesterday’s flavors…

I love that S&S haspartnered with Vernon Elementary School and allowed the kids to suggest flavors, with all profits going back to the school…

Bean & Cheese Burrito intrigued us, so we had to sample it. Turns out it’s actually red beans and cream cheese…

Complement Crunch was clearly a flavor created, by a kid, chocolate ice cream with all kinds of sweet things mixed in, like rice krispie treats, but Tropical Swirl had fresh kiwi and pineapple!

In the end, I went with a half-scoop of Sea Salt with Caramel Ribbons topped with a half-scoop of Cinnamon Snickerdoodle…

We had the chance to talk with Andy Wright of @atlasobscura about our amazing #volunpeers and the @smithsonian collections that they are helping to make more accessible every day. 

In addition to showcasing the tiny mysteries and adventures on each page, the article highlights the fascinating connections that emerge across projects and subjects through transcription. Gammeeok, NYC

More good news out of Koreantown last night… Gammeeok is back as well!

The popular 24-hour Korean bistro/pub has relocated and reopened further down 32nd St., right off Fifth Ave, now on the second floor above Five Senses…

This bright, new modern space has two dining rooms with a bar inbetween, and the kitchen keeps sending out Korean classics around the clock…

Their happy hours are back and in full-swing as well, with fantastic food and drink deals from 3-6pm, and again from 9pm to 4am…

Amidst the bottles of Kloud beer and Fresh soju, here’s a look at what we ate, starting with a pot of cut-your-own kimchi…

Jokbal pig’s trotters…

The salty dried shrimp sauce that accompanied the jokbal was amazing…

Pork belly fried in gochujang…

Deep-fried chicken wings…

I was expecting a little spice, but these were actually sweet…

Seared beef brisket with shredded scallion…

Seafood pajeon pancake…

Oxtail soup and yukgaejang, a spicy beef soup/stew…

They also have an art installation, in the form of message wall, where they provide diners with Sharpies so you can draw pictures or write messages after you eat. They just opened but it’s filling up fast…

Gammeeok is the perfect place to go to fill your belly with a wonderful Korean feast, and also get pretty liquored up, all at very reasonable prices!

Little Bao, Hong Kong

If you watched my “24 Hours in Hong Kong” video on Huffington Post, you know I fell head-over-heels in love with Chef May Chow’s Little Bao!

A small American-style diner that’s mashing up classic comfort foods with Chinese influences and accents, everything at Little Bao is made-to-order right before your eyes in their open kitchen…

Here I want to give you a better look at some of the amazing eats you saw a glimpse of in the video, starting with the luscious Lamb Tartare, made with Iberico lamb, fermented bean curd mayo and takana and tofu chips…

Their Sesame Caesar with Indian lettuce, fried dace, black bean and panko…

Brussels Sprouts with fish sauce caramel, chillis, peanuts, lime and fried shallots…

Their Thick-Cut Bacon…

Prepared Lap-cheong style, tea-smoked, with cabbage and pickles…

Little Bao signature Szechuan Fried Chicken bao…

Made with local “three-pocket chicken”, on a butter-grilled bao, with Chinese black vinegar glaze, Szechuan mayo and homemade coleslaw, it was one of the juiciest piece of fried chicken I have ever eaten…

And if one chicken dish wasn’t enough, we also got the batter-crusted Hot Chicken made with Szechuan spice and served with prawn chips. Watch your back, Nashville…

And the most eye-opening dish for me, Chef May’s magical ”Mac & Cheese”…

Steamed rice rolls baked in a mentaiko cheese sauce! So so so good!!!

I also highly recommend the Yuzu Leaf, a cocktail made with Jim Beam, yuzu, maple syrup and sea salt…

If you’re ever in Hong Kong, do yourself a favor and make a beeline to see Chef May at Little Bao…

“Fusion” is such a overused word these days, and doesn’t properly describe what they’ve created here at Little Bao. “Ingenious” seems more fitting.

* Sulfonamides compete for albumin with:

  • Bilirrubin: given in 2°,3°T, high risk or indirect hyperBb and kernicterus in premies
  • Warfarin: increases toxicity: bleeding

Beta-lactamase (penicinillase) Suceptible:

  • Natural Penicillins (G, V, F, K)
  • Aminopenicillins (Amoxicillin, Ampicillin)
  • Antipseudomonal Penicillins (Ticarcillin, Piperacillin)

Beta-lactamase (penicinillase) Resistant:

  • Oxacillin, Nafcillin, Dicloxacillin
  • 3°G, 4°G Cephalosporins
  • Carbapenems 
  • Monobactams
  • Beta-lactamase inhibitors

* Penicillins enhanced with:

  • Clavulanic acid & Sulbactam (both are suicide inhibitors, they inhibit beta-lactamase)
  • Aminoglycosides (against enterococcus and psedomonas)

Aminoglycosides enhanced with Aztreonam

* Penicillins: renal clearance EXCEPT Oxacillin & Nafcillin (bile)

* Cephalosporines: renal clearance EXCEPT Cefoperazone & Cefrtriaxone (bile)

* Both inhibited by Probenecid during tubular secretion.

* 2°G Cephalosporines: none cross BBB except Cefuroxime

* 3°G Cephalosporines: all cross BBB except Cefoperazone bc is highly highly lipid soluble, so is protein bound in plasma, therefore it doesn’t cross BBB.

  • RSA (except Ceftaroline, 5°G)

* Against Pseudomonas:

  • 3°G Cef taz idime (taz taz taz taz)
  • 4°G Cefepime, Cefpirome (not available in the USA)
  • Antipseudomonal penicillins
  • Aminoglycosides (synergy with beta-lactams)
  • Aztreonam (pseudomonal sepsis)

* Covers MRSA: Ceftaroline (rhymes w/ Caroline, Caroline the 5°G Ceph), Vancomycin, Daptomycin, Linezolid, Tigecycline.

Covers VRSA: Linezolid, Dalfopristin/Quinupristin

* Aminoglycosides: decrease release of ACh in synapse and act as a Neuromuscular blocker, this is why it enhances effects of muscle relaxants.

* DEMECLOCYCLINE: tetracycline that’s not used as an AB, it is used as tx of SIADH to cause Nephrogenic Diabetes Insipidus (inhibits the V2 receptor in collecting ducts)

* MRSA: Ceftaroline, Telavancin, Dalbavancin, Oritavancin, Vancomycin, Linezolid, Tidezolid, Daptomycin, Tigecyclin.

* Skin MRSA: TMP/SMX, Clindamycin, Doxycycline, Linezolid

* FQ: Gemi, Levo, Ciprofloxacin cover Pseudomona but do NOT cover anaerobes. Moxifloxacin covers anaerobes but do NOT cover Pseudomona.

* Ertapenem DOES NOT cover Pseudomona

* mAcrolides DO NOT cover stAph.

* ciPRofloxacin DOES NOT cover stReP

* Cefoxitin, Cefotetan: the only 2°G cephalosporins that cover anaerobes. Also deplete prothombin, so there’s increase risk of bleeding. 

* VRE: Tigecycline, Linezolid, Quinupristin/Dalfopristin, Daptomycin

* ESBL: (BLEE en español)  carbapenems, beta lactam+beta lactamase inhibitors

Missing Cat Surprised His Family After He was Found Bigger, Fluffier in a Pet Food Factory

A clever cat who disappeared from his home over a year ago, was found bigger, fluffier and happy in a pet food factory. This two-year-old Norwegian Forest Cat named Clive went missing in December 2014. His family was devastated and put up flyers around the neighborhood and posts on social media, hoping to find their cat, but he didn’t turn up. They lost hope until last Wednesday when the family received a call about their cat who was found snoozing in a pet food warehouse just two miles from their home. When the Kennelgate Pet Superstores got alarm calls from the warehouse at night because something kept setting them off, they went on an investigation and found the cat who had been living large, having free meals in the warehouse. After they got the kitty, they sent him to the vet where they found a microchip. When Tanya Irons met her cat after 14 months, Clive had doubled his original size and was fluffier than ever. He seemed well looked after or maybe Clive had been feeding himself quite nicely at a place where cat food was ubiquitous. They were surprised to see how much bigger he had grown and were thrilled to have him back to the family. Before he disappeared, Clive was very close to his feline brothers. After 14 months, they are back together.

What macro calculator do you recommend best? How do you calculate your macros?

I actually like the formula Krissy Mae Cagney uses in her book. You basically take your weight and multiply it by a factor of 10-16 depending on how physically active you are. People on the upper end of the spectrum are individuals who train multiple sessions per day, while those at the other end are sedentary.

  • For protein, you want approximately bodyweight in grams.
  • Amount of fat is more or less how many kilograms you weigh.
  • Carbohydrates make up the remaining calories.

This is a very basic formula, but I’ve found it to work well for me!
