Mandarin Blue Cherry Jam
three pounds fresh blueberries, crushed
1 1/2 pounds pitted fresh sweet cherries, crushed
one (11 ounce) can Mandarin orange segments, drained and crushed
1/4 cup lemon juice
1 (1.75 ounce) package powdered fruit pectin
five 1/2 cups white sugar
Directions
Combine the blueberries, cherries, oranges, lemon juice, and pectin in a huge pot; bring to a rolling boil. Stir within the sugar right up until it dissolves absolutely along with the mixture returns to a rolling boil; boil one minute and take away from heat. Pour into hot, sterilized jars and top rated with sterilized lids. Safe lids with bands, practice for five minutes in a very boiling water bath. Permit jars to cool gradually, generating a vacuum seal. Let to sit at room temperature one to two days to allow jam to set. Refrigerate just after opening.
Red, White and Blue Refresher
one quart pineapple or lemon sherbet
1 cup sliced fresh strawberries
1/2 cup blueberries
1/2 cup white grape juice or white wine
Directions
Divide the sherbet in between four dessert cups or bowls. Top together with the berries and grape juice.
Components
4 ounces crumbled blue cheese
four ounces cream cheese, softened
1/2 cup chopped candied pecans
1/2 cup chopped dried cranberries
Directions
Mix the blue cheese and cream cheese in a medium bowl. Stir during the pecans and cranberries. Serve at space temperature.
Blue Cheese, Bacon and Pear Brunch Sandwiches
1 Bosc pear, thinly sliced
1 1/2 cups apple juice
6 slices bacon
2 rosemary focaccia bread, or other square rolls, split
6 ounces blue cheese, crumbled
Directions
Location the pear slices inside a skillet, and pour inside the apple juice. Cook over medium heat until eventually the pears are soft, about five minutes. Drain pears and reserve; discard juice.
Meanwhile, location the bacon within a skillet and cook above medium-high heat right up until evenly brown. Drain on paper towels. Crumble and set aside.
Preheat the oven broiler.
Location the focaccia bread slices on a baking sheet. Divide the pear slices evenly among the bread, and prime evenly with the bacon, after which using the blue cheese.
Broil the sandwiches within the preheated broiler until finally the cheese melts, about 2 minutes.
