Spicy pumpkin soup (healthy, vegan, oil-free)

I have my doubts that there’s any food that describes autumn more perfectly than pumpkin soup. Pumpkin soup kinda equals autumn, doesn’t it?
The recipe I’m about to share with you today is not just a classy pumpkin soup but especially scores by the toppings. The combination – although it might sound strange at first (does it?) – is incredible!

Creamy pumpkin pasta 🎃🍂 I know y’all love savory recipes soooo here’s my most recent obsession. It’s kind of weird to combine Italian spaghetti and Asian coconut milk but I’m all in for crazy and tasty combos. Are you? Heat 1/4 cup of water in a pan. Add 1 butternut (chopped), 1 tsp curry powder, 1 tsp turmeric, 1/2 tsp black pepper, 1/4 tsp paprika, 1/4 tsp cayenne pepper and 1/4 tsp nutmeg. Cover and cook for 10 minutes. During this time you can prepare aka cook the spaghetti (whole-grain). Add pak choi to the pumpkin, stir in the coconut milk and cook for 5 minutes until the veggies are done. Then add the drained spaghetti and you’re ready to go - erm, eat.
