All Things Hummus::

I love produce box time.  I don't get a weekly box - even this vegetabletarian can become overwhelmed with freshness scattered haphazardly over the counter, demanding time for preparation and devouring.  In my peanut butter and jelly weekday world, there simply aren't enough hours to prevent organic yumminess from going foul.

So, when I get my seasonal harvest box, it's nose to the books to find the best recipe to fit the bill.  Today, Minced 'Shroom Pies.

Now - a disclaimer - I hate mushrooms.  They disgust me.  They are the bane of Satan - **note - not Seitan.  The only thing I hate worse than shrooms is wasting food.  So when a bag of these fungal nasties showed up in my box - I had to play nice.

So I pureed the crap out of them.  See, I think my fight with mushrooms may be the texture.

I found a recipe for Mushroom Pastries - I don't know where or how, but they were in my "owl" book - meaning I wrote it down into a journal from somewhere.  So I played with it - creating a "calzone" style crust and making a filling full of flavor to cover the existence of the mushrooms in the recipe.  And surprisingly - it worked.

So Like I said:  I pureed the snot out of the mushrooms - not quite to the point of pâte, but enough to make a thick filling.  Sauteed with onions, wine, bok choy (the recipe called for spinach, but I had bok needing using - in something OTHER than stir fry).  I even went so far as to chop in some beets - which honestly, could have been omitted.  Don't get me wrong - the beets are delicious, but some of the pastries took on a look of a berry stuffed breakfast treat - a definite trick on the palate.

The finishing touch was some vegan cream cheese, nutritional yeast, and herbs.  All folded together, folded into a dough circle - folded into the oven - then folded into my stomach: for delicious goodness.  Yes, I loved the mushroom Creation, even in spite of the fact that it was a Mushroom creation.

** On a side note - my carnivorous roommate also folded some into his stomach.  Him being a shroom tolerator, beet despiser - raved over the "delectable delights" <- his words.

I was recently craving Lentils, but impatient on the cooking time (though realistically it only takes as long as rice - yes - I was THAT impatient)

Discovered a recipe for crock pot Lentil Stew, and decided that night to have a sammich for dinner, resolving to crock pot some legumes the next morning.

Got up early Thursday - by early, I mean 5 minutes earlier - and got all the necessaries in the slow cooker.  By the time I got home, my place smelled AMAZING.  The stew delish.

Remember folks - crock pots are not just for meat...beans are beautiful!

All Things Hummus::

Sunday I made Pita (unbleached white=I was out of wheat).  I also experimented with a new recipe for TVP burgers - TVP, Broth, Flour, Oatmeal, seasonings...wrapped in foil and grilled/baked... not burger worthy, but not terrible either.

Until - Yesterday morning, I put a patty on a pita - **Note: not IN the Pita** - added roasted red pepper hummus - topped with the other piece of pita - zapped.  It came quite near the joy of a "sausage" breakfast sandwich.  (though I never liked breakfast sausage, I like breakfast sammiches).

Hence, today's Hummus Moment:: flavor testing still needed for the new patties, but success for a tasty vegan breakfast food on the go!
