Traditional (nearly) bagels I made literally by hand today. The two day process taught me a lot about the bread process and how it can be changed to bring out different qualities in the dough. When I first started the second rise last night the future was uncertain on how the night in the refrigerator would treat the dough. I had never used that process before so I was unsure how my hand mixed and kneaded dough would hold. The most important thing I learned is to trust my instincts, which I've been honing for nearly a year now. The best part, they came out amazing in taste, texture and appearance.

I reverse engineered a bagel yesterday. I asked my boss how they are made and I do it the "correct" way but my coworkers thought I knew what I was doing when they saw it so.

Look at this pizza I made tumblr. Mixed olives, cabbage, onions, banana peppers, roasted red peppers, roasted garlic, and sunflower seeds. The crust is a Roman style flat bread. The dough is super strange because it isn't balled or heavily manipulated so the structure of the bread is atypical. Thin in some spots big and bubbly in others. The longer it sits in the dough bucket the notes of sour dough get stronger.

Three days in a row I mixed the dough, cut and weighed it, balled it up, rolled it out and baked it off. Start to finish by my self. I started this bread nonsense five months ago and I could hardly pick up dough without half of it sticking to my hands. Now I can bake artisan bread from scratch.

Nothing like a good bread day to lift the spirits. Today I made three doughs, into five shapes without assistance or instruction and didn't seriously mess anything up. On my first day in charge of the bread too no less.

Days like yesterday might be hell but they can serve as s much needed reminder of how much work needs to be done.

I realized today while making bread that I'm getting paid to do art. I'm getting paid to do something artistic, as I'm making artisan bread. PS making over a hundred baguettes really makes your arms sore.

Made my first bread start to finish with no assistance or instruction today and it turned out beautiful, I'm so happy about it.
