Zakk has been having a bit of an upset belly lately, so I tamed down what was a spicy curry sauce with a little coconut milk and some ginger and made us a makeshift curry and rice dish. I used the leeks and onions (along with some fresh rosemary) as aromatics, and added a handful of spices including cardamom, paprika, nutmeg, fresh lime juice, anise, and (more) ginger and cooked those in a cast iron pan, then added my chickpeas so they could soak up some of that flavor along with some dried cilantro. I used coconut milk to cook the rice too so the whole thing has tons of flavor but less heat for his sensitive stomach. Still a lil heat tho :P I like my food spicy.
