Beng Mealea Temple - Siem Reap

Lost among the jungles for centuries, Cambodia's sacred temples attract tourists like magnets. We did our best to stay away from the large crowds at Beng Mealea to explore the magnificent sight when we stumbled on a monk praying. Time felt like it stopped. He looked peaceful as if he didn't have any worries at all. Just watching him somehow made us feel at peace too.

Beng Meala Temple at Angkor - Siem Reap, Cambodia

This was by far one of our favorite temples. Once consumed by the jungle, the temple is now a hot spot for tourists eager to climb over ancient sandstone blocks and wander into dark chambers.

One of the guides was an older woman and was kind enough to show us around. Whenever I didn't have a strong foothold she would offer me her hand; she had a strong grip and I could feel the wrinkles on her palm. As she gave us a tour around I couldn't help but notice the way she dragged her left leg. We later learned that when she was a child, she had stepped on a land mine and now wears a prosthetic on her left leg. This was one of the spots she pointed out to us and called beautiful. I wish I had taken a photo of her instead.

We're going to have a Vegan Wedding!

Time has flew by so fast - I can't believe I haven't shared the good news with you yet! Ting and I got engaged! 

We originally talked about eloping to avoid wedding planning but now that both of our families are excited, that has changed. Sooooo...

We will be planning a vegan wedding here in San Diego! We're aiming for fall of next year so we'll see if we can book our venue in time. I already have two venues in mind that fit in with our green theme so please keep your fingers crossed for us.

Vegan Halloween Biscuits

Our agency is very festive (remember Fourth of July?). So needless to say, we had another office potluck and with me being the only vegan in the office, of course I had to show 'em my "A" game. Only trouble was, what the heck was I going to make?

I knew I wanted to do a vegan dish that was hearty, filling and celebrated the holiday so I was stoked when I found Zsu's Vegan Pantry blog. She had a really easy recipe on how to create Halloween biscuits but I added a little twist to it. 

Instead of adding ketchup and mustard like Zsu did when she was cooking her vegan crumbles, I sautéed diced onions, added the crumbles then seasoned with salt, black pepper and garlic salt. Then I made the vegan biscuit dough recipe, put the first layer on my baking sheet, added a layer or vegan crumbles then topped with another layer of dough but made sure the dough had my Halloween decoration on it.

Giant Pandas - It was kismet for sure

So an old coworker of mine posted this photo on my Facebook wall earlier this week. 

And it just so happened that when we got to Costco, we saw a big huge giant panda! And well...this is what happened.

Bitchin' Pita Sandwich

I took my mom to the Hillcrest Farmer's Market yesterday and introduced her to all of my favorite vendors and sauces including "Bitchin' Sauce". I know the name sounds so wrong but this savory almond-based sauce is absolutely life-changing. And if you've read my previous posts, you know that their chipotle flavor is my absolute favorite. 

So with that said, here's a new dish I just whipped up in the kitchen that I like to call Bitchin' Pita Sandwich.

The words “detox” and “cleanse” may have you conjuring up an image of a miserable version of yourself two days into a seven-day plan to consume nothing but water, cayenne pepper and lemon juice. I don’t know about you, but this idea makes me cringe.

Fortunately, such extreme measures are not necessary for you to bring your body into balance. Nature has provided us with an abundance of foods that naturally detox and cleanse our systems, helping us achieve balance and sustenance. Double win!

Consider including the below foods in your everyday diet to help maintain balance, or try a diet primarily consisting of these foods for a set period of time (3-5 days) to hit the reset button on your health. It is bound to be much less painful than a more dramatic cleanse.

  1. Cucumber: on average around 95% water, this veggie helps flush out toxins and alkalize the body while delivering a powerful nutrient punch.
  2. Garlic: stimulates the liver to encourage production of detoxification enzymes.
  3. Broccoli: delivers a large dose of vitamins while neutralizing and eliminating toxins.
  4. Lentils: extremely fiber-rich (1 cup cooked has 62.5% of your RDA!), lentils aids in toxin elimination, lower cholesterol, and balance blood sugar.
  5. Turnip greens: loaded with antioxidants and sulfur-containing nutrients (Without sulfur, the body cannot properly detoxify substances such as pharmaceuticals, environmental toxins and heavy metals), turnip greens also contain phytonutrients called glucosinolates that help activate and regulate detoxification enzymes.
  6. Sunflower seeds: these little slivers of sunshine are not only high selenium and Vitamin E, but also assist liver’s detoxing capabilities \and prevent cholesterol build up in the blood and arteries. Be sure to choose  organic as their high fat and oil allows them to easily soak up chemicals used in the production process.
  7. Walnuts: infuse the body with healthy omega-3 oils to assist detoxification.
  8. Turmeric: stimulates liver function. (Also a great addition to your diet for all-around health).
  9. Red pepper: when it comes to cleansing, vitamin C is one of the cream of the vitamin crop because it transforms toxins into digestible material. One red pepper contains about 3 times more vitamin C than an orange.
  10. Citrus fruits: see above.
  11. Grapefruit: a class of its own, grapefruit lowers cholesterol, prevents kidney stones and aids the digestive system, which set it apart from the other citrus fruits.
  12. Watercress: keeps free radicals away from cells, energizes cleaning enzymes in the liver and is a natural diuretic.
  13. Mung beans: used by Ayurvedic doctors for thousands of years, this easily digestible bean absorbs toxic residue from the intestinal walls.
  14. Artichokes: chock-full of cynarin, which increases bile production and promotes healthy digestion.
  15. Whole grains: full of nutrients and antioxidants, whole grains are incredibly high in insoluble fiber, keeping you regular, which is especially important while detoxing.

Remember to always hydrate, which further helps dispel impurities. For an extra kick, add green tea which has a special type of antioxidant called catechins (a flavonoid) that increases liver function and helps flush impurities. 

Doesn’t this all seem so much more pleasant than lemon and pepper water!?

Happy Vegan at Tender Greens

Met my girlfriend for lunch at Tender Greens and was so happy when I saw a protein packed salad called "Happy Vegan" that had five different sides!

Happy Vegan

  • Farro with cranberry and hazelnuts
  • Quinoa with cucumber and beets
  • Guacamole
  • Tabbouleh
  • Tender greens

Looking back at the photo, I should have paid more attention to taking closeups of all the sides. What can I say? I was really excited and hungry.

If you're not familiar with Tender Greens, they work with small local farmers, ranchers, artisans, boutique wineries, breweries and coffee roasters, to provide their guests with the best quality ingredients. And they have locations all over California. 

They next time you come across a Tender Greens, I highly recommend the Happy Vegan salad and if roasted vegetables are available on the side, get those too!
