I got in the mood for a brookie the other day so I decided to try my hand at ice cream brookies, because why not? It's got 2 peanut butter chocolate chip cookies, each atop a layer of some vanilla ice cream I also made, with a brownie layer on the bottom. Everything was so good π

Some times you just want donut ice cream sandwiches π€·π½ββοΈ all made by me this morning. The donuts are super simple. Coconut flour, a sweet potato, an apple, banana, sweetener, and cocoa powder. Very delicious!

I mentioned like last week on here it's so awesome my blog has still been helping people become vegan and see all the wonderful options. But it's also awesome to see so many of you all that I've met and talked to over the years. Just want to preface this post with this: This meal was absolutely amazing, perfect even! The star was definitely the egg roll but the right rice and teriyaki broccoli were exceptional. Inside my egg roll were brussel sprouts - chopped up, shredded carrot, onions, and a little beyond burger drizzled with general tso sauce cooked up in the air fryer with the broccoli. Wonderful little meal I say.
I feel like this is almost becoming a vegan dessert page now lol. I've been enjoying making my own baked goods and ice creams pretty much from scratch for a couple of months, testing out different ingredients/methods.
My cakes are usually fire and I think I've almost perfected the ice cream. This was one of the best ones yet I made with my new protein powder I decided to try, vegan cream cheese, 0 cal sweetener, and almond milk. The cake was coconut flour, a banana, strawberries cooked down in almond milk and 0 cal sweetener, cocoa powder, some of the strawberry jelly used for lava π and a few chocolate chips. This type of stuff soothes my very active sweet tooth but helps me stay fit - a win win for me!
I made a really tasty ramekin style pizza using coconut flour for the base/crust. The crust was more fluffy like a biscuit than pizza dough but I wasn't expecting a pizza dough texture anyway - I was just going for simplicity and it was a great result! Inside was vegan cheese sauce, beehive pepperoni, and incogmeato sausage and daiya on top. Air fried veggies on the side with more cheese ππ½
I made this really simple cheesecake type thing for dessert earlier using coconut flour, half a banana, vegan cream cheese, vegan sweetener, cinnamon, vanilla, almond milk, and some chocolate chips mixed in there. Then topped it with this protein powder cream I whipped up. It wasn't super fancy but it did taste good π
Probably the best pizza I've made in a long time. I think I've perfected the pizza stone method ππ½

My best friend, boyfriend, and I had part 2 of our Friday night potluck. We had a Saturday morning reprise with a casserole made by myself with beyond meat beef and sausage, vegan bacon, onions, tofu scramble, daiya cheese with a side of biscuits I made along with vegan Mac and cheese and french toast made by my bestie. I had so much amazing food this weekend π
