i did the campsite reset trick last week all day for two days to get the animal i want and not one camper showed up?!

Dont load into your mayor character. Create a new villager before the day begins (before 6am).
There can't be any events that day either. Some days it depends on how lucky you are. Usually if I don't see a camper that day after the 8th created character I just time skip to another day and start again.
