Whoa, how do you have such a good grasp on anatomy? Watching your timelapse was absolutely stunning with how nicely things came together!
I used to draw and practice drawing a lot from life, like from photos of people! And I studied some general things like muscles like a few years ago and have been kinda just skating by on that LOL. It helps to think about everything as it fits in a 3D space.
Also it's good to know general proportions (this is only really useful for people with thinner builds, but it works as a baseline) like the legs and feet being roughly the same length as the rest of the body, the wrist being at crotch height and the tips of the fingers being a bit higher than mid-thigh when standing neutrally, etc. After you practice and study enough it gets easier to remember! I'm of the opinion that NOT doing any practice from real people teaches you a lot of really bad habits...
EDIT: it also helps I guess that when I was starting out, I was drawing objects, then animals, then skeletons, then people. LOL
