recipe:
the dough:
200g flour, a pinch of salt, 1 tbsp sugar, 100g cold butter, 1 egg yolk, 3tbsp ice cold water
mix in a bowl and rub the butter with hands or mix in a food processor. the mixture should resemble wet sand, that’s when you start smashing it together to form a dough. you know it’s ready when the bowl is clean and you have a ball of dough in your hand. Cover it with cling film and put in the fridge for 30min.
meanwhile you can cut the peaches thinly and sprinkle them with lemon water
roll the dough, sprinkle it with 1 tbsp of flour and lay the peaches, leaving about 5cm margin. Fold the margin over the peaches, put a few tiny cubes of butter on top of them, smear some eggwash on the crust and put in the oven preheated at 180′C for about 25min or until the edges are nicely golden. Take it out, while it’s still hot, brush some apricot jam or honey over the peaches and crust. That’s it
