Dough:
- ¼ cup milk, room temp
- 3 TBL sugar
- 2 tsp yeast
- 1 egg, warm temp
- 1 cup bread flour
- Dash of nutmeg1/2 tsp salt
- ¼ cup butter, room temp
Icing:
- 1 TBL cream cheese
- ½ TBL milk
- 3 TBL powdered sugar
- Cornstarch, as needed
- Place barely warm milk, sugar, and yeast in a small bowl. Allow to get foamy, about five minutes. Pour into a large bowl.
- Add egg, flour, vanilla, and nutmeg. Mix until just combined. Cover and allow to sit for 15 minutes. Add the salt and knead in the bowl until an elastic dough forms, about 5-8 minutes
- Using a dough scraper, carefully fold in the butter, ½ TBL at a time. Once the butter is added, form into a dough ball, cover, and allow to rise for about 2 hours or until doubled in size.
- Once doubled, lightly cornstarch a work surface. Pinch off small balls of dough and place into silicone molds so they are about 1/3 filled. If using metal molds, make sure to butter them first. Allow to rise until they double in size again.
- To bake: If using metal molds: Bake in 375 degree oven for 18 minutes or until golden and cooked through.
- If using silicone molds: cook in a 400 degree oven for 5 minutes, drop to 375 and cook for another 10-15 minutes. Remove from oven and allow to cool completely.
- For Icing: Cream together cream cheese, salt, and sugar until combined. Whisk in milk. Drizzle over cooled buns.
