Imagine a conspiracy theorist doomsday cult circling around the Forsaken and/or the Ebon Blade where they believe that a new- or even the current Lich King might become corrupt again and rise to power much like he had during the Scourge days... They believe that every undead is connected somehow through necromancy, or just those who were once part of the Scourge, and the new omnipresent LK is going to sweep a wave of mind control across every undead population and they all lose their free will again Or they all begin decomposing at a rapid pace and fall apart and it seems like they cannot stop it fast enough

Overall I don't think they care that much about outer beauty in the same sense as they did when alive, but old habits die hard even if you died yourself and there's probably some different ideals floating around
Maybe it's about who "has the most free will (of the Forsaken)", and who can boast a confident sense of self.. for Death Knights, about strength and discipline I suppose
To more recently risen undead it's probably favorable to look as intact as you can (more common among them since they did not die from the Plague or were ever mindless Scourge footmen), and people who look more alive probably benefit from some sort of "pretty privilege" because the living are less put off by them... ... and on the other hand, there's a counter culture where you reject trying to be "acceptable" to the living. They instead openly embrace their undeath and go all out on the spooky scary creepy, where it's considered cool to have weird fleshcrafted body mods and grafted skin (with tattoos as a collection??) just because they can do that painlessly and the living can't : )

Because it's shown in lore parts can be replaced, there has to be some Forsaken couple that have literally taken each other's hands in marriage, literally swapping one of their hands around for their partner's, and vice versa.

I want to say yes a Forsaken can lose mass but in the same way a raisin does, they dry out. Even if they can keep rot and decay at bay with embalming preservatives water content will be lost for sure causing them to reduce my significant margin. However it is a one-way process and they won't be able to regain said mass without literally grafting it back on as you've said. They could try immersing themselves in water to physically force the re-acquisition of water content, but the results would not be pretty.

I don't know if there's an official source on it (I haven't read any of the books) so don't quote me on this, but in my head they're kind of stuck at where they died
Depends on how long they were decomposing and in what environment before being risen, and if they take care of themselves as undead they'll stay in that same ageless body. They can't grow hair, just add implants
If they want to change their bodies they literally have to sew it onto themselves or remove it through fleshcraftin/necromancy/blood magic or what have you... go book an appointment and get yourself an extra pair of muscular arms
I think death knights are tougher than the average undead and it's easier for them to preserve and enhance their bodies, but they also stay frozen where they died
Pros: stimulants give me the ability to paint for much longer and I can be patient enough to take my time with the same illustration, and it's drastically improving my artistic skills
Cons to some: since it takes much longer to draw I must raise my comm prices quite a bit if I wanna offer this quality ¯\_(ツ)_/¯
