sydney's omelette........what a perfect scene. the omlette's not frilly but made with so much care. all the recipes she tested alone or with carmy were off because she was trying too hard to make something she thinks would be considered the best, the most unique, the most different. but the omelette is the most simple thing made fun and delicately. it's eggs and cheese and potato chips and scallions and butter.
