As for Aziraphale, he could be a pre-war ghoul (like from vault 12 even!), but he could've been in cryo sleep for a good while if that were the case. Radiation seeps in while everyone's asleep sort of thing, doesn't have to be lonely.
But he could also still be a newer ghoul, either by accident/exposure, or as a result of a certain chem (like Hancock and -possibly- a character from the prime series (though that could still be like, the Cabot serum)).
I personally do like the thought of them knowing each other before the war. Maybe just coworkers at the time? But Aziraphale ending up in a vault, and Crowley being stuck at work when the bombs dropped and going into their bunker.
He could keep working through either intermittent cryo stints and have his memory imprint taken more recently, and just put into an older-gen body for testing. Orrrr it could happen much earlier on. Memory file either stored... or he could've been essentially reset a few times already. (But either of these do still work if they're not pre-war and Crowley was born into the Institute.)
But also as for the aging thing, you could also easily do them both as synths, but Aziraphale being the newest (fully organic!) gen. Maybe defending Aziraphale is why Crowley ended up a synth as well.
And they escape together and still have their little rooftop garden that counts as a Railroad safehouse to shelter other synths who want to be free.
