You: Gandalf looks like a human because humans are the most common people in middle earth when he arrives.
Me (an intellectual): Gandalf and the other Istari were designed to look like a blend of the major peoples, which is why they’re bearded, agelessly wise immortals shorter than the average human but taller than most dwarves and hobbits. It is never clarified if they have ears. It just so happens that this reads as human.
I appreciate that you didn't say "we don't know what their ear shape isnlike" but rather "we don't know if they HAVE ears" that's thorough.
