I stopped because I went to New Zealand, and didn't bring my sourdough starter. There's frozen sourdough starter waiting in the freezer in my house in Scotland for me to return and start bageling once again.

Working with rye flour was fun, as it was closer to using clay than to using dough. They were not beautiful but they tasted amazing.

Neil, as a fellow bread maker, I’m begging you to share your recipe. Those look amazingly delicious and mine never turn out that well.

Here's my notes to myself from the time:

100 ml starter 200 grams rye flour 220 ml water Mix well, cover with cling film, leave overnight. Next day, add 50 g of Buckwheat flour, 50 g of Barley flour, 100 g of rye flour. 1 tsp of sea salt and 1 tbsp of maple syrup in 2 tbsp of water. Mix well, cover with cling film, leave for a couple of hours in a warm place. Put a big pot of water on to boil. Add syrup to the water. (I’m using date syrup.) Take a bowl of water. Wet hands. With wet hands, make a ball of dough, handful size — think medium snowball. Smooth it, make the hole in the middle, drop into boiling water. It will sink to the bottom, then rise. After a couple of minutes, turn it over in the water. After a couple more minutes take it out and put it on baking paper on a baking tray. I sprinkle the paper with flour. Keep hands wet through all of this, as if working with clay. Don’t crowd the bagels in the water pot. No more than 4 at a time. Give them time — they get puffier. When all the bagels are on the baking tray (it makes 6 or 7) put them in the oven for about 16 or 17 minutes. Then turn them over. Back in the oven for another 6 minutes. And then they come out. Off the tray. Let them cool, and then eat them.

There's no heat setting mentioned, because I was cooking them in an Aga oven which doesn't have fancy things like temperature controls, but is somewhere around 220C or 420F.

I searched for it and found lots of people talking about how nice it was that Neil Gaiman was sharing a bagel recipe but not seeing this. So I’ve re blogged this and am using my name (Gaiman) and the singular of bagels (bagel) in here to see if Tumblr’s search functions work if you prod them.

I'm reblogging this, mostly because it's all I can find. Even Google seems determined not to show the post I wrote here a few years ago about the history of Bagels. (It's fascinating. To summarise, there were centuries in Poland when Jews were forbidden to bake or buy bread, and bagels, as a boiled bread dough, were a solution to that.) And the hole meant that bagel sellers would use broomsticks, or just long rods, or strings, as bagel-carriers.

When Jews first came to America, they brought beigels with them. Their Union was the Beigel Bakers Union. (You can learn about them, about the New York Beigel strikes, and about the end of the union and the job in the 1960s with the arrival of the Thompson Bagel-making machine at https://en.wikipedia.org/wiki/Bagel_Bakers_Local_338.)

@neil-gaiman is that 100ml of active starter, or are we feeding the sleepy starter with the 200g rye the night before? Or does it not really matter?

Active starter. By morning we have 300ml of active and enthusiastic levain/leaven.

Well, they probably just got busy themselves, like you. I know there are people I kind of stopped talking to without really meaning to, because a conversation ended and no one ever started a new one. So they probably still remember you. Just start talking to them again, maybe find something you know they were interested in, or just say what made you remember them. Ask how they've been doing.

They'll probably be happy to hear from you again as well!

If they don't want to be friends, they'll probably end the conversation very quickly or just say they've moved on. Honestly, if you had done anything they really didn't like they'd probably have blocked you so if they didn't do that they don't hate you.

I was at our local bakery recently and came across a loaf of bread quaintly branded as a “Peasant Loaf”. It was selling for over $6—the irony of this was not lost on me. 

In retaliation I have decided to post what I actually think of as a peasant loaf, but with the luxury of finely ground modern flour which is less likely to break your teeth because actual peasant loaf bread is like chewing rocks unless you’re soaking it in soup or stew. 

This is a very simple loaf, it requires no special tools and is a fairly forgiving dough for beginners to work with. Also it has the added bonus of looking like an expensive artisan loaf, but costs literal pennies to make once you invest in the basic ingredients.

So what do you need?

Ingredients:

  1. Plain flour (or wholewheat if you prefer)
  2. One sachet of active dry yeast.
  3. Salt.
  4. Water.

Tools:

  1. Bowl
  2. Mug

Prep and bake time total: 2 hours 45 minutes.

Yep, that’s it. You’ll notice that there’s no quantities listed up there, and that’s because you’ll be using the mug to measure everything. This helps to make sure your quantities are consistent, and means that so long as you have a mug and your ingredients, you can make bread. Heck you don’t even need a bowl, it just makes clean up easier.

When you’re panicking and you’ve got about three million different things to do and you start baking gingerbread turtles instead. #DUMBASS

Hey guess what guess what - those three million things are still there and they’re still scary, but hey - cute lil’ TURTLES! 😍

If anyone’s curious, I used this recipe and swapped the matcha powder for gingerbread spices and the white chocolate for dark because white chocolate is neither chocolate nor white and that makes my brain go dizzy. But anyway, it was surprisingly easy and they’re tasty! Though I might make them savoury next time, sweet stuff is not really my thing? I’m thinking I could keep the sweet dough exactly as it is and use some garlic butter or gorgonzola instead.

watching this as a German is surreal. Because only only of the two options is what I would even call bread but it’s so fucking expensive.

Because in Germany the cheap “bread” version doesn’t exist because the expensive bread is fucking cheap here.

Like the cheap “rye bread” is still double as expensive as rye bread in Germany which looks like the expensive rye bread (ten times as expensive as in Germany)

I'm quite socially anxious and sometimes when I actually confront people, they refuse to listen to me. I don't really understand why but they just cut me off and brush me aside. And sometimes that makes me have a sort of anxiety attack but I can't tell anyone because then they definitely wont listen to me and they think im stupid

Yikes, they don’t sound like the nicest of people to be around bean. If it helps at all to talk you can always come to me or @cookie–anon cause we’re both in slightly different time zones so if I’m asleep they’re usually awake.

There are reasons to stay, for example the first female Doctor, season starts this coming weekend! Don't you want to see that? Or maybe the new Supernatural season, or Queer Eye season 3? Whatever you pick, stick around a little longer and you'll feel better.

Well I has.. not been doing so good lately I've been more lonely and thinking the bad thoughts and even thought about injuring me which is not so good and I'm not sure what to do is there things that maybe I can do to help or try to feel more positive

This is a hard one. If you’re not already I suggest seeking help from a counselor or therapist. They’re fantastic and often very helpful.

In the short term try some regular self care. Treat yourself to some products from lush and have a nice bath with candles and stuff. It sounds dumb but go sit in the sun and relax somewhere. A bit of sunlight can do wonders for your mood. I’m not sure why. Take a day off and do something you’ve always wanted to do. Sleep in. Watch a movie. Just little things. Look for the little positive things that happen each day. It sounds trite I know but it’s how I’ve managed to stay above water so long. It’s not a cure. Only hard work and therapy can do that. But it helps with the symptoms that weigh us down sometimes.

I hope this was helpful in some way.

I've read that when you feel the urge to self-harm, you should use an ice cube instead. That helps with the urge but doesn't actually do harm. Other than that, what Georgia said.

Quiche

So, my mum asked me to make quiche. So far so good, no problem. She forgot to look for her recipe and I couldn’t exactly find it, handwritten piece of paper somewhere in a dozen cookbooks.

I found the second best recipe, which was for quiche lorraine. She wanted one with whatever the English word for Lauch is.

Conclusion: When I called to ask her she said to simply add a kilogramm of Lauch to the rest of the filling. And to make 1.25 times the dough.

So I guess I’ll just do that and see what happens…

And to exactly no one's surprise it ended up too full and overflowing. Bit crispy too on top.

Still tasty though, and that's the most important thing.
