I’ve been MIA lately with my meal plans because our schedule has been so wonky lately. Here are a few things we’ve had that we’ve really enjoyed!
- Lightened up tuna noodle casserole (LOVED this - I used half the mushrooms recommended)

I celebrated another trip around the sun last week, and when I went to make a wish, all I could think to wish for is another year like the past one. I’m so grateful for this life.
When we planned our wedding, we asked my cousin, an aspiring baker, to create our cupcakes.
Every year on our anniversary, I make the same cupcakes, and we get to eat our wedding cake again :)
This morning in spin class, the instructor told us to close our eyes and think of what we're grateful for. My husband instantly popped in my head.

@ashleysbipolarlife @meow-ornever @mystoryfortheaudienceoftheworld You all are so sweet, thank you :) She has been vomiting white foam the last few days, and it got worse this morning so off we went. They did X-rays and didn't find a blockage, but they're not sure what's causing the vomiting. So I get to shove pills down her throat 3x a day for the next five days. Cats love taking pills, right? 😂
Spent my day at the emergency vet with this sweet buddy. Happy to have her home and hopefully on the mend!

The reviews are in!
- Sunday: spaghetti squash enchilada bowls (enchilada sauce recipe!)
- B-: I really liked these but was hungry after even though I added black beans. Next time I’d add chicken and corn for more substance
- Monday: loaded “nacho” chicken toastadas
- B: Basically open-faced tacos so they’re obviously delish
- Tuesday: leftovers
- Wednesday: grilled caesar buffalo chicken salad (we follow this recipe but buy the dressing because a girl can only make so many things from scratch)
- A+: This is one of our favorite dinners
- Thursday: french bread pizzas (loosely based on this)
- C: It’s not the recipes fault this isn’t real pizza - but it’s a good way to use up the rest of the baguette from the grilled caesars so there’s that
- Friday: out!

- Monday: twice baked cheesy potatoes AND buffalo brussels sprouts with blue cheese
- Tuesday: chicken enchiladas (homemade sauce! double it and freeze the leftovers!)
- Wednesday: maple/soy glazed salmon, green beans
- Thursday: leftovers
- Friday: out

- Sunday: Santa Fe crockpot meatloaf
- A: this was so good! I accidentally ate all the leftovers before Jason had any, and he was so bummed!
- Monday: vegetarian quesadillas
- C: these were a bummer. I loved the mashed black beans with Cholula but the quinoa/spinach mix was so bland. Pretty sure a recipe isn’t needed for quesadillas - lesson learned
- Tuesday: zucchini lasagna
- A+++: absolutely amazing. I used 10 (whole wheat) noodles instead of 8 and had plenty of filling. MAKE THESE ASAP
- Wednesday: salmon burgers
- B-: meh.
- Thursday: leftovers
- Friday: out!
