The "eldest daughter" experience has to do with the trauma of your very existence being a disappointment to your parents because firstborn ought to be sons, combined with the burden of being a second mother to the family because women are only there to wash, clean, cook, and raise kids. It's not an all purpose term for feeling like you have to be hyper helpful for any reason whatsoever (and I'd argue that's not even a trait obi-wan has), it's to do with why ELDEST DAUGHTERS are hyper helpful.

obi-wan is a man raised communally by non-relatives in a relatively sex equal society. Literally NONE of the common trauma of eldest daughters could possibly apply to him.
